Mexican Coffee Buns, Roti Boy, Pappa Roti

Ingredients

Topping

  • 3 g instant coffee granules
  • 40 g unsalted butter
  • 35 g pure icing sugar
  • 40 g plain flour
  • 1/2 --- egg
  • 5 g hot water

Dough

  • 100 g Milk
  • 25 g sugar
  • 4 g dried instant yeast
  • 1/2 egg
  • 200 g Baker's Flour, bread flour
  • 3 g salt
  • 30 g unsalted butter, room temp

Filling

  • 8 g Salted butter, prepare 6 x 8g blocks and keep it in the freezer until ready for use

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Topping
  1. Mix coffee with hot water in a small bowl and set aside.
  2. Add butter and icing sugar into Tm bowl, mix Blend30sec/speed 3.
  3. Add 1/2 egg and coffee mixture and mix Blend10sec/speed 3.
  4. Add flour and mix Blend10sec/speed 3. Scrape down sides of bowl and mix again Blend10sec/speed 3.
  5. Place into piping bag and chill in fridge until ready to use.
  6. Dough
  7. Add milk, sugar, yeast and 1/2 egg into Tm bowl. Activate yeast by warming and mixing Blend2min/37oC/speed1.
  8. Add baker's flour and salt and knead Dough mode3min.
  9. Add butter and knead Dough mode2 min.
  10. Shape into a ball and proof for 1 hour or until double in size. Punch down dough and degas, divide into 6 even balls and rest for 35mins.
  11. Using your hands, gently push thumb into the center of the dough ball place 1x 8g butter into the middle. Pinch opposite sides of dough together so that butter is enclosed within the dough. Roll and form back into balls. (It is mportant to pinch shut the opening of the dough so that the butter doesn't leak out of the bread dough whilst baking).
  12. Place filled balls onto a baking tray and allow to rest for another 35 minutes.
  13. Pipe topping in circular motion, starting from the centre of the bun moving outwards till about 1/3 of the top of the bun has the topping.
  14. Bake in a preheated oven at 180oC for 15 - 20 mins until golden.
  15. Serve warm and enjoy!

Tip

Buns can be made 1 - 2 days in advance. When wanting to eat, just pop them into the air fryer and reheat at about 180oC for about 3 - 4 minutes.
