PALEO BANANA BREAD

Ingredients

WET MIX

  • 3 bananas, very ripe
  • 110 g Ghee or Oil or choice
  • 1 tablespoon vanilla, powder or equivalent liquid
  • 2 eggs
  • 5 dates, pitted

DRY MIX

  • 220 g almond meal
  • 30 g tapioca flour
  • 2 teaspoon baking powder

GARNISHING

  • 50 g Raw Pecans, chopped chunky
  • 1 tablespoon Coconut sugar, or your sugar of choice

Recipe's preparation

    WET MIX
    1. Melt the Ghee on 100˚ for 2 minutes | Reverse | Speed 2.
    2. Add the rest of the wet ingredients.
    3. Blend on Speed 4 | 10 seconds.
  1. COMBINING
    1. Add dry ingredients.
    2. Mix as little as possible as you dont want to 'overwork' the mix.
    3. I used Speed 4 | 8 Seconds.
  2. PREPARE YOUR LOAF OR CAKE TIN/MUFFIN TRAY

    1. Line your tin/tray with baking paper.
    2. Pour your finished mixture into it.
    3. Garnish the top with some yummy goodies for an extra special finish.
    4. I used chopped pecans and coconut sugar sprinkled around evenly.
  4. COOK
    1. Cook for 45-55 minutes (start checking it at 45minutes).
    2. Temperature 160˚ for a fan forced oven. 170˚ otherwise..
    3. 'Low and Slow' is how you cook this Banana Bread or you will burn the outside and have 'mush' on the inside tmrc_emoticons.)
    4. Every oven is different so checking it 'often' at the end of the process is the key...

Tip

You can turn this recipe into a cake by using a round cake tin.. 1 12cm wide round tin would be great.

You can also use this recipe to make muffins... just make the same recipe and pour into muffin tin/wrappers.. and garnish the top.. kids love them and they are super healthy.
