If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place bakers flour, salt, olive oil, sugar and yeast in bowl.
Mix 5sec speed 5 to combine.
Add cold water.
mix for five and a half min speed dough.
Place dough mix on lightly floured bench.
cover with tea towel to bulk proof for 11/2 hours.
Cut to 100g peices and roughly round without knocking out too much gas.
20 min intermediate proof
Line 2 baking trays with baking paper and Semolina.
Using hands gentley stretch dough into shape.
Using fingertips make indents over top of dough.
Wash with egg wash and sprinkle with seasame seeds
Heat oven to 260 deg
20 min Final proof
Bake for 12-15 min or until golden on top

Tip
Dough will be sticky to touch if needed spray hands with oil.
Dont over handle the dough be gentle and try to keep the gass in it.
