Wholemeal Spelt Bread

Ingredients

20 portion(s)

  • 100 grams whole spelt grains
  • 300 grams lukewarm/tepid water
  • 1 sachet instant dried yeast, equals 8g
  • 1 teaspoon salt
  • 420 grams Wholemeal Spelt, Flour
  • 20 grams olive oil
  • 10 grams sesame seeds whole, or other seeds

Recipe's preparation

    Method
  1. Place grain into bowl & mill 30 secs/speed 9 


    Add water, yeast, salt, flour & oil. Mix 6 secs/speed 6


    Knead 1 min Closed liddough mode


    Turn dough out onto Thermomat & knead by hand for a few turns, to make a nice smooth shaped loaf shape


    Wrap loosely in Thermomat & leave to rise (prove) 10-15 mins until doubled in size. Or put it in a loaf tin & cover with the mat, with something on each end to keep it sealed. (if the dough is exposed to air it will form a skin, & wont rise)


    Once the dough is risen, shape into a loaf (or rolls). Wet & sprinkle with seeds of your choice. (I used sesame)


    Place in a COLD oven & bake 25 mins at 180oC. When its done it will have a hollow sound when tapped on the bottom.


    Tip out onto a cooling rack at once

I proved my dough in a heavy duty large loaf tin & got a low loaf.

    My loaf did not rise in 15mins, needed 40 mins. Baked 20mins in pre-heated oven. Yum!
