"Buttermilk" Waffles - Vegan version

  • 45 g coconut oil
  • 400 g almond/coconut milk, Fermented with 25g cider vinegar
  • 6 level teaspoons Ground Flax Seed
  • 2 level tablespoons water
  • 1 tablespoon vanilla extract
  • 1 teaspoon Bi - Carbonate Soda
  • 45 g Unsweetend Apple Sauce
  • 125 g Wholewheat SR Flour, SR flour
  • 125 gram SR flour

Recipe's preparation

  1. Heat waffle machine up. Make sure the machine is really hot!

    Mix the ground flax seed with the water in a small bowl. Let it rest for a few minutes to allow seeds to absorb the water.

    Mix the milk with the cider vinegar and set aside. The milk and vinager mix should stand for at least 5 minutes.

    Mill sugar on speed 9 for 3 seconds. [I often use coconut sugar.]

    Add the coonut oil and apple sauce to the TMX bowl. Melt, 90/1 minute/soft speed.

    Add almond milk mixture, vanilla and flax seed mixture to TMX bowl. Beat, 10 sec /speed 4.

    Add remaining ingredients. Mix, 10 sec / speed 6.

    Use a generous 1/4 cup of waffle mixture for each square waffle.

     

    The creation is borne out of desperation....having to feed a picky 11 year old NON-vegan son as well as a 16 year old VERY vegan daughter....it was a great success! Nice and crispy on the outside and soft inside.

    PS. Vegan daughter spent three months in Belgium before she turned vegan... and she was impressed!

Tip

 Make sure that waffle maker is oiled well. The lower fat content means that the waffle mixture tends to stick to the machine.

This recipe can be doubled. You may need to add more time to your final mix.

    Brilliant, our daughter made them for Mother's Day breakfast this morning - what a hit with freshly cut fruit and yoghurt! Seriously Yum!
