Cadbury Creme Egg Rocy Road

  • 150 g plain sweet biscuits
  • 150 g Butter
  • 200 g dark chocolate block
  • 200 g milk chocolate block
  • 4 tablespoons golden syrup
  • 2 packages mini Cadbury Creme Eggs, unwrapped
  • 180 g white marshmallows, (I used Pascall brand and chopped in half)
  • 75 g white chocolate
  • 1 package large Cadbury Creme Eggs, unwrapped

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1.  

    1. Line a slice tin with baking paper.

     

    2. Crush biscuits for 2 seconds on Speed 5 then put aside in a separate bowl. You want large chunks rather than a crumb, not only so the rocky road looks pretty when you cut it but you get that lovely crunch when you bite into it!

     

    3. Melt the butter for 2 minutes at 50 degrees on speed 2.

     

    4. Add the dark and milk chocolate and golden syrup and melt for 4 minutes on 50 degrees on speed 1.

     

    5. Let the chocolate mixture cool for 10 minutes then add the mini creme eggs, marshmallows and reserved crushed biscuits and mix for 40 seconds on Counter-clockwise operationspeed 2 until everything is coated in the chocolate.

     

    6. Place into slice tin and press down firmly. Wash and dry bowl completely.

     

    7. Place white chocolate in the bowl and melt for 2 minutes at 50 degrees on speed 2. Once melted, place into a piping bag or ziplock bag and cut a small corner off. Drizzle the white chocolate over the rocky road.

     

    8. Arrange the large egg halves on top of the rocky road by pressing firmly into the chocolate so they stick. Place in the fridge for an hour or until set. If you are impatient, put it in the freezer to speed up the process.

     

    9. Cut into small pieces with a sharp knife and enjoy!
