Chia Pudding Breakfast Custard

  • 100 g raw almonds
  • 550 g water
  • 70 g chia seeds
  • 2 tbsp Coconut sugar
  • 1 tsp vanilla essence
  • 2 tablespoon Cacao
  • 1 egg

Recipe's preparation

  1. 1. Weigh 100g almonds into Thermomix bowl and grind on speed 9 for 20 seconds

     

    2. Add 550g water and blend on speed 9 for 1 minute

     

    3. Add following ingredients, and cook at 90 degrees for 7 minutes, speed 3, reverse:

     

    - 70g Chia seeds

    - 2 Tbspns coconut sugar

    - 2 Tbspns Cacao

    - 1 Egg

    - 1 tsp vanilla essence

     

     When cooked it should be a custard/porridge consistency. 

    Serve with fresh or frozen berries and yoghurt and eat hot or cold.

     

    Makes 4-5 serves depending on your preference.

Tip

This is great to have in the fridge for an easy breakfast. Just spoon mixture into seperate containers and refrigerate.

You can store for up to a week in the fridge.
