Recipe's preparation

    For peppermint flavour
  1. 1. Grate the chocolate on speed 9 for 10 secs, then put aside.

    2. Add condensed milk and butter to TM, heat 80degrees/5minutes/speed2

    3. Add chocolate to mix, there should be enough heat for it to melt. 2min/speed 2, with 30 seconds to go add in the vanilla essence and peppermint essence.

    4. Quickly pour this into the tin to set, drop the tin on the counter to release air bubbles.

    5. Chill in the fridge for 3 hours before cutting and serving.

  2. Hints and Tips
  3. You can substitute all kinds of flavours, so far i have used plain chocolate, coffee & kahlua, strawberry and peppermint. Simply change the block of chocolate and/or essence flavour.

For a half mix, just reduce the heating time to 3 minutes, and you can also reuce the time when adding the chocolate.

I find that good quality chocolate such as lindt 90% and the dark chocolate work best.
