Chocolate Fudge (with homemade Condensed Milk)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Prepare for Fudge
  1. 1. Line tin or tray with bake paper.
    2. Mill 200g chocolate 5-10 seconds, speed 9. Set aside.
    3. Mill 200g Sugar 10 seconds, speed 9. Set aside.
  2. Condensed Milk
  3. 4. Without cleaning the bowl insert butterfly whisk.
    5. Add all Condensed Milk ingredients (80g water, 150g sugar, 90g butter and 110g powdered milk).
    6. Mix 6 minutes, 90 degrees, speed 4.
    7. Remove Butterfly Whisk. Leave condensed milk in the bowl.
    8. Add butter (125g), reserved milled sugar and liquid glucose (25g).
    9. Cook for 8 minutes, 100 degrees, speed 3.
    10. Cook for 20 minutes, Varoma, speed 2.
    11. Add milled chocolate. Mix for 30 seconds, speed 3.
    12. Pour into prepared tin. Refrigerate.
    13. Once set cut into desired size and serve.
    14. Store in the fridge. (If it lasts that long!)
