  • 1 lemon, for zest & half for juice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Clean and peel lemon and place skin into bowl.

    Zest 10 sec / Speed 7

     

    Add juice of half the lemon and the remaining ingredients into bowl and blitz 10 sec / Speed 7

    Blitz for longer if you want a smoother consistency

     

    Roll teaspoons of mixture into ball and coat in coconut (if using).

    Store in fridge or freeze.

Tip

You can use dried cherries instead of cranberries and natural almonds instead of macadamias.

Will keep for a couple of weeks in the fridge or a month in the freezer

Great idea for Christmas plates as there are flecks of red & green from cranberries and pistachios.
