Easy Pantry Pancakes

Ingredients

Pancake Batter

  • 300 grams Self Raising Flour (2 cups)
  • 500 grams full cream milk
  • 2 eggs
  • 50 grams Butter, Cubed

Toppings

  • Maple syrup
  • bananas, Sliced

Recipe's preparation

  1. Place all batter ingredients in TM bowl. Mix 20 sec speed 5-6 or until well combined (it may be a little lumpy if you use cold butter, but this doesn't matter). For best results allow to rest for at least 30 mins prior to cooking. 

  2. Heat frypan on medium heat (use a teaspoon of butter to test heat - it should melt quickly without sizzling). Pour desired amount of batter onto frypan (depending how large you like your pancakes) and wait until the surface is covered in bubbles before turning. Turn and cook until light golden brown. Repeat until all batter is used, or store remaining batter in the fridge overnight.

  3. Top with bananas and maple syrup, or any other toppings you like.

Tip

I use a heavy base non-stick fry pan so I don't need to add any oil or butter to it. If you are using a regular fry pan you will need to add a little butter before cooking each pancake to avoid sticking.
