Easy Sticky Date Pudding

Sticky Date Pudding

  • 210 g Dates, seeded
  • 260 g Boiling water
  • 1 tsp bi-carb soda
  • 100 g brown sugar, (I've cut this to 50g and still great)
  • 60 g Butter
  • 2 eggs
  • 140 g SR Flour, or Plain with 1 tsp of baking powder

Caramel Sauce

  • 140 g brown sugar
  • 100 g Butter
  • 250 g cream
  • 1 tsp vanilla essence
  • 6

Recipe's preparation

    Sticky Date Pudding
  1. Preheat oven to 180C. Grease 20cm square tin or a muffin tray.

    Combine dates, boiling water and soda in Closed lid. Let stand for 5 minutes

    Add sugar and butter to mixture and process on speed 6 - 7 for 10 seconds until dates are chopped.

    Scrape down and add flour first, then eggs and and process on speed 4 - 5 for 5 seconds at a time until combined.

    Pour into prepared tin or large muffin cups. (Makes 9 large muffins)

    Bake for 15 - 17 minutes in a moderate oven for muffins and 20 - 25 for larger tin. Stand for 5 minutes before turning out.

     

     

  2. Caramel Sauce
  3. Place all into TM bowl and cook on 80C, speed 1 for 2 minutes unti butter has melted.

    Cook for another 5 - 8 minutes on Varoma, speed 2. Sauce will thicken on standing.

Tip

Use thickened cream or add more butter if you would like the sauce to be a little thicker.

Alternatively, cook it longer.

Try this with Rapadura sugar for a lovely butterscotch flavour.For a more dense, but higher fibre pudding, use wholemeal self raising flour.

    Beautiful sticky date and so easy, have made many times. 50g sugar in the cake is plenty as the sauce is very sweet. I need to cut my dates in half though to check for rogue pips prior to cooking them as a retained pip adds bitterness. Make as cupcakes so leftovers can go into lunchboxes (just brush a bit of the sauce over the top with pastry brush so not so messy). Love this recipe.

    Very easy and tasty recipe. I used less sugar in the puds and subbed the cream for coconut cream in the sauce and subbed rapadura for the brown sugar in the sauce and it still turned out delicious

    Made this last night. What a hit!! Like a lot of others I halved the sugar in the cake. I also used gluten free flour. Mine didnt seem to rise as much as the one in the photo but still tasted sooo good! Next time I might try the butterscotch sauce

    Great, quick and easy recipe. Made 12 regular cupcakes for me. I found them quite sweet (but still delicious) but everyone else thought they were perfect. I'll probably try with a bit less sugar next time and see if anyone notices.

    Thanks for the great recipe. Instead of brown sugar I used 1/3 cup maple syrup and I added 1 teaspoon ground ginger. The recipe makes 12 small muffins which are perfect for dessert,

    5 stars is not enough. I want to give this recipe 100 stars. It is amazing! I have made these puppies over and over again (using the muffin tray version) and they turn out perfectly every time. So light and fluffy, so flavoursome, the perfect amount of sweetness (I only add 50g brown sugar as suggested), never dry, never stodgy, and the butterscotch sauce is heaven. Hubby and I add cream to ours when serving it, but kids prefer the sauce on its own. Either way, this recipe is and firm favourite in our house.

    SOOOOO good!!!! The sauce is amazing. The kids said it tasted like russian fudge which I agree!
    Cake is super moist. I halved the sugar as stated from 100gm to 50gm which I'm glad I did as the sauce is very sweet.

    I substitute egg all the time as my daughter is allergic. I've used vinegar 2tbs, baking powder 2 tsp and oil 2tbs as well as the orgran egg replacer product brought from health food store or iga supermarket. Both give wonderful results you'd never guess there is no egg.

I made this recipe last night for friends, surprisingly easy to do & it was a hit, doggy bags were even requested for leftovers. The tip to make the sauce first is a good one, no unnecessary cleaning mid recipe. I've created a new recipe collection called deserts, just for this little beauty!Lol
