Frozen Lemon Cheesecakes with biscuit base

Ingredients

Lemon Butter

  • 40 grams lemon juice
  • 110 grams caster sugar
  • 80 grams Butter
  • 2 eggs

Cheesecake mixture

  • 250 grams Cream Cheese Block

Biscuit Base

  • 125 grams Self Raising Flour
  • 155 grams brown sugar
  • 100 grams melted butter

Recipe's preparation

    Mini Frozen Lemon Cheesecakes
  1. This is a variation of the original recipe posted by Jae Rolt, with the addition of a home made base.

     

    Make and cook biscuit base. Preheat oven to 180 degrees. Mill flour and sugar on speed 9 for 10 seconds. Add butter and mix on speed 4 for 5 seconds or until all ingredients are combined into a crumble.

     

    Line slice baking dish (18cm x 28cm) with baking paper and press mixture firmly into tray to cover whole base.

     

    Cook for 10 minutes. Mixture will rise slightly and bubble but is cooked. Will set when removed from oven. Set aside and let cool. Clean bowl.

     

    Filling:

    Use the lemon butter ingredients and make as per the Thermomix Everyday Cookbook.

     

    When finished, remove the butterfly and scrape down the bowl.

    Add cream cheese (cut up into about 8 pieces)

    Mix 5 secs / speed 3 just to bring it all together.

    Mix again 10 secs / speed 7.

     

    Create:

     

    Take base and shape to size for intended cheesecakes. Use shot glass to cut to size for mini muffin tray. Use MC to cut to size for normal muffin tray. Silicon trays work best to remove cheesecakes once frozen. Cutting the base mixture while warm (not hot) works best.

     

    Place piece of base into mould of choice. Pour filling mixture on top. 

     

    Freeze for at least 30 minutes or until set.

Tip

Using light Philadelphia cream will make the mixture a little bit runny, but does not change the finished product or taste.

 

Remove from freezer 5-10 minutes before consuming.

 

If packing in the kids lunchbox, put in a sealed container, next to a freezer brick and add a spoon tmrc_emoticons.-)
