Fudgy Hedgehog Slice

  • 550 grams Assorted biscuits, Either assorted or your mix but do not use creamed assorted
  • 150 grams Walnuts (or pecans)
  • 300 grams Butter
  • 50 grams cocoa
  • 250 grams Raw Sugar or Rapidura

Recipe's preparation

  1. Fudgy Hedgehog Slice
  2. Mill raw sugar 10 sec speed 10. Set aside.

    Mill assorted biscuits in 2 batches by pressing turbo (4-6 times depending on preference of texture). Set aside.

    Place butter in bowl and chop for 4 sec speed 8.

    Add Cocoa and sugar and insert butterfly. Cook for 3min 80° speed 2.

    Add 1min to the time increase to speed 3 and add eggs one at time through the top. Remove butterfly.

    Add biscuits and walnuts and mix for 1min Reverse + speed 4.

    Place into rectangular tin put in fridge to set.

Tip

Can ice with Ganache for a more decadent slice.

Ganache:

100g dark choc (try Lindt Orange or Peppermint)

80g cream

Place choc into TM and grate for 5 sec speed 8.  Add cream cook for 2min 50° speed 3.

    ABSOLUTELY DELICIOUS!!!! and really easy to make, i used the Lindt 80% cooking chocolate for the topping tip and it was amazing!

    I have amended this recipe and added 150grams of good quality chocolate to the sugar, cocoa ect mix.Cook as instructed. Adds a whole new texture to the recipe ... totally delicious and texture a lot firmer.. Give it a go !!
