Jane's Mango Sticky Rice

Ingredients

Glutinous Rice

  • 300 g glutinous rice, Soaked with hot water for at least 2 hours.
  • 600 g water
  • 1 tsp salt

Sweetened Coconut Milk

  • 400 g Thick Coconut Milk, 2 packets of Ayam Brand
  • 100 g brown sugar
  • 2 tsp salt

Thickening

  • 1 teaspoon Corn Flour, Mix with 1 tbsp water (Optional)

Mangoes

  • 4 piece Thai Mango, Slice before serving.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Glutinous Rice
  1. Add water, insert simmering basket, pour drained glutinous rice into basket, using chopstick to make a few holes in order to allow steam pass through.

    Keep cooked rice in ThermoServer or a container, set aside.

  2. Sweetened Coconut Milk
  3. Rinse TM bowl after cooking rice, add B to cook.

    mc / 5 min / 90°C / speed 2 

  4. Pour 200g coconut mixture into rice, stir and mix well, keep for 15 minutes, allow rice to absorb coconut milk thoroughly.

  5. Thickening
  6. Mix 1 tsp Corn Starch with 1 tbsp water, pour into TM cook with remaining coconut milk.

  7. Serving
  8. Slice mangoes before serving, drizzle sweetened coconut milk, sprinkle some toasted mung beans or toasted sesame on top. Serve immediately.

Tip

You may serve cold or hot.Add a few blades of screwpines while steaming rice to enhance the aroma of the rice. Thickening process is just an option, I didn't do it most of the time. when the milk is cold, it is thicker in texture.
