Layered Summery Berry Frozen Cheesecake

Ingredients

Base

  • 1 package Butternut or Choc Ripple Biscuits
  • 2 tablespoons Butter, melted

Layer One

  • 1 package Philly Cream Cheese Light Block
  • 250 grams strawberries, frozen
  • 2 tablespoons icing sugar
  • 1/2 leaf titanium strength gelatine

Layer Two

  • 1 package Philly Cream Cheese Light Block
  • 250 grams raspberries, frozen
  • 2 tablespoons icing sugar
  • 1/2 leaf titanium strength gelatine

Layer Three

  • 1 package Philly Cream Cheese Light Block
  • 250 grams blueberries, frozen
  • 1/2 leaf titanium strength gelatine
  • 2 tablespoons icing sugar

Top

  • 1 package Aeroplane Jelly, Grape Flavour

To serve

  • 1 package Fresh mixed berries

Recipe's preparation

  1.  

    BASE LAYER

    Melt Butter in TM, speed 3, 60 degrees, 1 min.

    Add biscuits and pulse until well combined.

    Press into base of tin. Pop in freezer

  2. LAYER ONE

    Put Gelatine Leaf in cold water and soak for 5 minutes. Remove and squeeze excess water and put in bowl with remaining ingredients

    Combine speed 5, 1-2 minutes or until completely smooth. (no fruit chunks)  (You may have to stop to push sides down if cheese freezes too quickly)

    Pour on top of base biscuit layer and return to freezer for 20minutes.

  3. LAYER TWO

    Repeat as per Layer one but with raspberries

  4. LAYER THREE

    Repeat as per Layer one but with Blueberries

  5. TOP

    Prepare Jelly as per packet instructions and allow to cool completely.

    Once cool pour approz half of the mixture on the top layer and return to freezer

  6. TO SERVE

    Remove from freezer about 1/2 hour before required and remove from tin and remove baking paper from bottom.

    Top with fresh berries to serve.
