Lime Mousse

Ingredients

4 portion(s)

To serve (optional but nice!)

  • A handful raspberries
  • some bright green leaves like mint or lemon balm

For the Mousse

  • 2 1/2 ripe avocados, pitted
  • zest of 2 Limes
  • 1/2 cup lime juice
  • 2 tablespoons honey
  • 1/2 teaspoon salt

Recipe's preparation

  1. Hull fresh raspberries or place frozen raspberries on a plate to thaw.

    Pick leaves of lemon balm or mint, wash, pat dry, cover until needed.

  2. Place all Mousse ingredients in the TM bowl and

    purée 15 seconds/ speed 8 for a smooth consistency.

    Fill in individual dishes and chill for at least 1 hour,

    decorate with berries and leaves before serving.

Tip

This mousse is best fresh for optimal nourishment but to use seasonal supply of avocados it can be frozen for up to 3 months in a suitable container.
