Marney's Spiced Apple & Chia Pancakes

Pancake Batter

  • 400 grams apple
  • 30 grams Butter
  • 150 grams Spelt Flour (white or whole)
  • 30 grams Rice malt syrup/ maple syrup
  • 1 teaspoon baking powder
  • 1/4 teaspoon bicarb soda
  • 1 teaspoon cinnamon
  • 10 grams white chia seeds
  • 1 egg
  • 15 grams Coconut Flour
  • 150 grams Milk, (or coconut milk if dairy free)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Place 100g apple into mixing bowl (reserve 300g for serving with pancakes) chop 5 sec/speed 4.

    2. Add butter to bowl and melt 40 sec/50°/speed 3

    3. Add all other ingredients into bowl and mix 20 sec/speed 4, scrape down sides and mix for a further 10 seconds if necessary.

    4. Using butter to lubricate frypan, drop batter into pan and cook until small bubbles appear, then flip pancake. 

    5. Put pancakes into ThermoServer to keep warm. 

    6. Chop remaining apple into slices and cook in pan with remaining butter to brown.

Tip

Keep the heat in your pan low to avoid burining the pancakes.Delicious served with butter, honey and fruit.
