No Bake Date and Rice Bubble Slice

Ingredients

  • 220 grams dates
  • 100 grams Butter
  • 1 tsp vanilla essence
  • 40 grams sugar
  • 120 grams rice bubbles
  • Coconut, as needed

Recipe's preparation

  1. 1. Add butter and sugar, and dates to TM bowl. Chop for 8-10 seconds/speed 8 to break up the dates, then cook 4 mins/100 degrees/speed 2. Dates should be mushy.

  2. 2. Add rice bubbles and vanilla essence to TM bowl 20 seconds/Counter-clockwise operation/speed 3 to mix it all together.

  3. 3. Line or grease a slice tin and press in mixture then sprinkle with coconut.

  4. 4. Refridgerate til cool then cut into pieces.

Tip

You can use less sugar if you like.

I have also made this using corn flakes because i ran out of rice bubbles. It tasted just as nice.

    This turned out amazing. I used 1/2 the sugar, and will porbably go no sugar next time i make it, the dates add plenty of sweetness. The kids give it a huge tick of approval and are looking forward to it in their lunch boxes tomorrow. I have a feeling i am goin gto make this many times over the next 13 or so school years!

    Fantastic recipe.  Didn't read notes so will reduce sugar next time. Topped with sprinkles instead of coconut as my kids aren't keen on coconut.  5 yr old declared ' best muesli bars in the world! ' thank you.  Will be a regular, also love the no bake,  I've burnt a few lol
