- 50 grams Butter
- 200 grams raspberries
- 2 tablespoons icing sugar
- 375 grams cream cheese
- 220 grams caster sugar
- 3 eggs
- 1 tablespoon vanilla extract

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
Preheat oven to 170 degrees.
Melt butter in bowl 30 seconds 50°C speed 4.
Add biscuits to bowl & blend 10 seconds speed 9, scrape bowl & blend again 3 seconds speed 5.
Press biscuits into paper cup cake cases using back of spoon until smooth.
Bake 5 minutes then remove & cool.
Clean & dry bowl.
Place berries & icing sugar into bowl & cook 5 minutes 90°C speed 3 then give a quick blitz by gradually increasing speed to 5 for a couple of seconds. Push coulis through a sieve to remove seeds. Set aside.
Clean & dry bowl.
Add diced cream cheese to bowl 60 seconds speed 5.
Scrape down bowl
Add caster sugar 15 seconds speed 4. Scrape down bowl & repeat 15 seconds speed 4.
Set time to 30 seconds speed 4 & add eggs 1 at a time through hole in lid.
Add vanilla 10 seconds speed 4.
Pour cream cheese mixture over biscuit bases.
Place approximately 1 teaspoon of raspberry coulis on top of cakes & swirl with a skewer.
Bake for 15 minutes until just set. Leave oven door ajar & allow cakes to cool completely in switched off oven.
