Ingredients

Base

  • 60 g almonds
  • 60 g Desiccated Coconut
  • 30 g Maple syrup
  • 10 g coconut oil, Soft

Peanut layer

  • 270 g Peanut Butter
  • 30 g Maple syrup
  • 10 g coconut oil, Soft

Chocolate top

  • 25 g Cacao
  • 55 g coconut oil, Melted
  • 45 g Maple syrup

Recipe's preparation

  1. 1. Line small tray with baking paper (to make it easier to remove slice once frozen).

    2. Grind almonds into a fine meal, speed 10 for 10 seconds.

    3. Add desiccated coconut, maple syrup and coconut oil and combine, speed 4 for 10 seconds. Spread evenly in prepared tray and freeze.

    4. Without rinsing the bowl, mix peanut butter, maple syrup and coconut oil, speed 4 for 10 seconds. Spread evenly over base and freeze.

    5. Rinse bowl. Add coconut oil (and melt on 80 degrees, 2 minutes, speed 2, if required). Add cacao and maple syrup, mix on speed 3 for 10 seconds. Spread evenly over peanut layer and freeze for 15 minutes.

    6. Remove, cut into squares and store in freezer.

    I have actually swapped the maple syrup for honey, but half the qty.
    I also doubled the base, did normal peanut butter and topping. Went a lot further in the pan, and not as thick.
    Great go to for a sweet snack..

    I made this last night and it turned out fantastic.
    I did double the recipe, as it didn't seem to be very big when I started it. In hindsight, I think just doubling the base and topping would have been enough.
    Great go to for a sweet snack.
    I did swap the maple syrup for the maple flavour syrup though.
