Beef and Guinness Casserole

and Guinness Casserole

  • 500 grams stewing beef, diced
  • 40 grams olive oil
  • 1 onion
  • 1 leek
  • 2 carrots
  • 2 celery sticks
  • 2 garlic cloves
  • 230 grams beef stock
  • 100 grams Guinness, or any type of stout (from a bottle)
  • 60 grams Butter or Ghee
  • 150 grams streaky bacon, diced
  • 200 grams mushrooms, chopped into chunks
  • 4 shallots, finely sliced
  • 50 grams plain flour
  • Salt and pepper
  • mash potato to serve

Recipe's preparation

    Method:

    1. Put butter or ghee in TM bowl and melt 2 minutes/Varoma/Speed 1.

    2. Add bacon, mushrooms and shallots and cook 5 minutes/Reverse/Varoma/Speed soft.

    3. Add flour and cook 1 minute/Reverse/100'/Speed soft.

    4. Remove bacon, mushrooms and shallots from TM bowl and set aside in a thermo server or bowl.

    5. Add garlic, onion and leeks in TM bowl and chop 5 seconds/Speed 7.

    6. Add carrot and celery and chop 5 seconds/Speed 4 (be careful not to chop these too fine, you want them fairly chunky).

    7. Add oil and sauté 5 minutes/Varoma/Reverse/Speed 1.

    8. Add beef and cook 5 minutes/Varoma/Reverse/Speed 1.

    9. Add beef stock and Guinness and cook 2 minutes/Varoma/Reverse/Speed 1.

    10. Add the mushroom & bacon mix into the TM bowl and cook 35 minutes/100'/Reverse/Speed 1.

    11. Leave for 10 minutes after cooking before serving so that the meat becomes more tender.

    12. Serve with mashed potatoes.
