Beef Fillet, Pistachio Mayonnaise, Crisp Summer Salad

Ingredients

4 portion(s)

Beef fillet

  • 650 g eye fillet beef
  • 1 tablespoon olive oil
  • salt & pepper
  • 40 g Port
  • 1 teaspoon wholegrain mustard
  • 1 teaspoon horseradish cream
  • 1/4 teaspoon marjoram, dried

Crisp Summer Salad

  • 1 clove garlic
  • 6 sprigs of continental (flat leaf) parsley
  • 30 g honey
  • 30 g lemon juice
  • 30 g white balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 large zucchini, diced
  • 1 Lebanese cucumber, roughly chopped
  • 1 punnet cherry tomatoes
  • handful of snow peas or sugar snaps

Pistachio Mayonnaise

  • 50 g pistachio nuts
  • 1 shallot, quartered
  • 80 g Baby Spinach Leaves
  • 100 g TM mayonnaise

Recipe's preparation

    Beef Fillet
  1. 1.Rub beef with oil, salt and pepper. Sear quickly in a hot pan, until evenly browned. Place seared beef into Varoma dish.

    2. Add 750g water to TM bowl. Place Varoma into position, then cook for 15-25 minutes at Varomatemperature on speed3.  (Cooking time will depend on thickness of beef, and doneness required) Allow beef to rest.

    3. Add port, mustard, horseradish and marjoram into clean TM bowl. Mix for 6 seconds on speed 6. Pour over beef and chill until ready to serve.

    4. Slice beef, and discard marinade before serving.

     

  2. Crisp Summer Salad
  3. 1. Place garlic and parsley in TM bowl, and chop for 5 seconds on speed 7. Add honey, lemon juice, vinegar and mustard, and mix for 5 seconds on speed 5.

    2. Pour over prepared salad ingredients and chill until ready to serve.

  4. Pistachio Mayonnaise
  5. 1. Place pistachio nuts, shallot, spinach and TM mayonnaise into TM bowl, and mix for 20 seconds on speed 5.

    2. Serve Pistachio Mayonnaise with sliced beef fillet and Crisp Summer Salad.

    We absolutely love this dish! Especially the pistachio mayo - yummo - and the crisp healthy salad. This was the first time we've ever had zucchiniraw and won't be cooking the goodness out of them anymore. The steak was very tender. Thanks for sharing this SmileTongue

    This is so delist! We were having friends for lunch on a day that was predicted to be a heat wave so I made a potato salad and this the day before so we were not heating the hous on the day. Just added the dressings before serving with a sweet potato bread from the recipe community.Yummo, and time for friends with me not in the kitchen much on the day.

  • I used a 1.5 k piece of meat

    I used a 1.5 k piece of meat and cooked in varoma for 50 minutes, it wasnt enough as was still pretty raw in the middle.  Half my guests liked it rare so it was ok and for the rest i just flash fried the remainder of the meat for 30 seconds. I also added Feta to the salad. Next time i might try to use cream cheese instead of mayo. Will definitely be making this again! Yum

    This was a fantastic receipe.   As it can be made hours before serving.  Use a good cut of meat otherwise you will be disappointed.  The pistachio dressing was delightful.   It amazed me that the meat was cooked in the varoma.  The colours made the dish look great.  I'm going to serve this for xmas lunch. You won't be disappointed.  Thankyou for sharing this receipe with us.  tmrc_emoticons.)

    What a clean, fresh, lovely summer stunner. My grown up family loved it.  I added more mustard to the mayo though as it needed a punch. My daughter suggested a handful of cranberries to the salad. It is a meal to enjoy with others.

    Great Recipe! I did it last night and the family loved it! I steamed it for a bit longer because my gang don't like it too rare -  I cooked pototoes in the basket and steamed carrots and broccoli in the top of varoma at the same time -  absolutely winner!

    This is a great Summer Entertaining recipe, that you can make in advance. It is very simple, even though there are a couple of components to the recipe. In the photo, I cooked the beef for 15 minutes, as I prefer rare. I love the colours, textures and flavour combinations. I served this to our very good friends on Christmas Eve, and they loved it. Enjoy this with your good friends and family.
