Beef Stir Fry by Dani Valent

  • 2 garlic cloves, peeled
  • 2 spring onions, white part only
  • 30 g oyster sauce
  • 50 g soy sauce
  • 50 g sugar
  • 10 g sesame oil
  • 300 g rump or porterhouse steak, or more if you're feeding more, whole not sliced
  • 3 eggs
  • 70 g rice per person (up to 400g)
  • 30 g vegetable oil
  • 10 g ginger
  • chilli, fresh or paste, to taste
  • 400 g mixed vegetables such as purple cabbage, carrots, broccoli, bok choi and beans, cut into bite-sized portions

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. First, make the steak marinade. Put the garlic cloves and spring onions in the TM bowl Closed lid and chop for 2 seconds/speed 7.
  2. Add the oyster sauce, soy sauce, sugar, and sesame oil to the TM bowl Closed lid, and mix for 10 seconds/speed 3. Rub all the marinade into the steak. Leave it in the fridge for 20 minutes or more.
  3. Don't clean the TM bowl Closed lid. Put the TM basket in place, weigh in 70g of rice per person, then pour over 1 kilogram of water. Wash the rice by mixing for 10 seconds/speed 5.
  4. Place the marinated steak in the base of the Varoma and pour the steak marinating liquid over it.
  5. Put the Varoma tray in place, over the steak, then take a large sheet of baking paper, dampen with water, scrunch it up, then spread it over the Varoma tray. Crack 3 eggs into a bowl and whisk them. Tip the eggs onto the baking paper in the Varoma tray.
  6. Cook the rice, steak, and omelette for
    22 minutes/Varoma/speed 2.
  7. When the timer has finished, tip the rice into a Thermoserver or other heatproof bowl and rest the steak and omelet on top. Cover with the lid or foil.
  8. Wash and dry the TM bowl Closed lid. Heat the vegetable oil in the TM bowl Closed lid for 2 minutes/Varoma/speed 1. Add the ginger and fresh chilies or chili paste to taste. Chop for 2 seconds/ speed 7, then scrape down. Add the mixed vegetables and cook for 6 minutes/Varoma/Reverse/speed 1.
  9. To plate it up, mound the rice in a bowl. Slice the steak and omelet, and arrange the meat, vegetables, and omelet on top.

Tip

Take 2 minutes to make bread before commencing. While the bread is proving and baking, continue with the stir-fry. You won't even need to rinse the Thermomix bowl. A whole meal with bread all cooked in one bowl!

Dani made this dish in our cookery class and using a 3cm thick piece of rump, which took up most of the Varoma dish, 400g of rice and the vegetables, it could have fed a hungry family of at least 6 - 8 people.
