Beef Stroganoff - Paleo Style

Ingredients

4 portion(s)

Beef Stroganoff

  • 1 brown onion, halved
  • 500 g Beef, rump, tenderloin, strips
  • 30 g ghee or oil
  • 1 tablespoon paprika
  • 1/2 teaspoon cayenne, more if you like it spicy
  • 20 gram apple cider vinegar
  • 50 gram water
  • 50 gram tomato paste
  • 1 tablespoon vegetable stock concentrate
  • 1 teaspoon Dijon mustard
  • 100 gram sour cream, Dairy free, see link for recipe

Recipe's preparation

    Beef
  1. Chop onion speed 7 3secs

    Add ghee or oil, parprika, cayenne, saute 3mins, Varoma, speed 1

    Add beef, cook 10 mins, 100 degrees, rev, speed 1

    Add remaining ingredients, cook 10mins, 100 degrees, rev, speed 1

    Serve with cauliflower mash.

    Yum!!! Added mushrooms and zucchini, left out water (as per other comments) and cayenne and used a bit less acv. My 5yr old was happy to eat the diced onions and really liked the whole dish!! I loved it! Gave it 4 stars as would have been way too watery with water.

    Tasty but a bit tangy for me so might try without apple cider vinegar next time. Added capsicum and used cream cheese 80gm as I don't have sour cream. Cooked a further 4.5mins as I used store bought beef strips which are usually not very tender. Had with jasmine rice. Thanks for sharing!

    This was the best stroganoff i've ever had. I made a few tweaks;

    - used 1/2 ACV & 1/2 Worcestershire sauce;

    - added 2 small potatoes cubed, 1 carrot sliced & 6 button mushrooms

    - skipped the water - was saucy enough.

    Cooked this last night and I have to say it was lovely.  Quick and easy.  Added some extra vegetables and the meat was lovely and tender.  I think it does matter the cut of meat you use.  Won't work if you use a casserole cut.  I used round steak and got away with it but left the strips reasonably thick.  Really nice recipe and now in my faves list.  Thanks for posting it!     This sauce is delicious, I made it minus the cayenne and added a heap of veggies (carrot, celery, fresh paprika and eggplant) which worked really well.

     

    is there any tip to getting the beef tender as mine came out quite tough.
