Better than Nonna's Bolognese

  • 1 onion, whole, peeled
  • 30 g olive oil
  • 400 g chopped or diced tomatoes, I use tinned
  • 10 pitted kalamata olives, about 30 to 40 g
  • 1 tsp Dried parsley
  • 2 tsp Vegetable stock paste
  • 140 g tomato paste
  • 500 g Beef mince
  • 70 g red wine

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Add whole, peeled onion to bowl and chop 3 sec/speed 7, MC in place. Scrape down sides of bowl
    2. Add olive oil and cook 5 min/100 degrees/speed Gentle stir setting, MC in place
    3. Add tomatoes, olives and parsley and blend 30 sec/speed 5 slowly increasing to speed 9, MC in place
    4. Add vegetable stock paste, tomato paste, beef mince and red wine and cook 25 min/100 degrees/Counter-clockwise operation/speed 1, with the simmering basket sitting on lid (this allows more steam to escape but prevents splashes). Check the sauce after a couple of minutes to ensure the mince is being incorporated. If not, then break it up with the aid of the spatula and continue cooking.
    5. Serve and enjoy!

Tip

To add a bit of heat and give it a Mexican feel, add 2 small finely chopped chilis after step 4, then stir 2 min/Counter-clockwise operation/speed 1

    Thanks for the recipe! Made this for dinner tonight. Served it lasagne style using eggplant instead of pasta with a creamy keto sauce. Added carrot and zucchini to the sauce at step one because I need to squeeze in the hidden vegies wherever I can. Best bolognaise I've ever made!
