Chicken Broccoli Bake

  • 250 g Tasty cheese, Chunks
  • 1 onion, peeled and halved
  • 4 cloves garlic, Peeled
  • 40 g oil of you choice
  • 500 g cauliflower florets, (1 small) chopped (incl stalk)
  • 400 g coconut milk, 1 can
  • 1 tablespoon TMX Veg Stock Paste
  • 500 g broccoli florets, (2 small) chopped (incl stalk)
  • 2 Carrots medium, Diced
  • 1000 g chicken breast or thigh, Diced (3cm)
  • 2 teaspoon curry powder
  • 2 teaspoon Garlic powder
  • 3 frozen peas, cup
  • 6

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Pre-heat oven 200degC

  2. Grate cheese in TMX 5sec / speed 8 remove and save for later.

  3. Place onion and garlic in bowl and chop 3sec / speed 7

    Add oil and saute 5min / 120deg / speed 1

  4. Add cauliflower, coconut milk and veg stock paste to bowl.

    Place broccoli and carrot in bottom varoma tray and chicken in top varoma tray.

    Steam for 25min / Varoma / speed 1

  5. Make sure chicken is cooked and set aside with vegies.

    Add curry powder and garlic powder to cauliflower and blend 1 min /speed 5 gradually increasing to 9

  6. Place chicken, broccoli and carrots into baking dish.  Add peas and pour over the cauliflower sauce, stir and top with grated cheese.

    Bake in oven for 15-20 min until cheese is golden.  Use griller to help brown cheese if necessary.

Tip

I transfer into 2 oven dishes and bake one and freeze the other for an easy dinner later on.

This can easily be converted to a paleo recipe by omitting the peas and cheese and simply sprinkling paprika over the top before baking for a little colour.

Recipe works for TM31 as well.

    i made this tonight and it was amazing. One thing I would change next time is i would put the peas in with the cauliflower to blend them in to hide them from the kids only because they dont like peas and that was all that was left on the plate lol Smile

    So yummy!! A regular dish in our household. I skip the cheese for our son who is dairy-intollerant and is still delicious without it!!! I sometimes even halve the chicken and mix through cooked penne pasta to turn it into a pasta dish.

    It was enjoyed but 4 out of 5 of us (1 being my fussy five year old!) I didnt have any curry powder but had korma paste in the fridge so used that and it was delicious. This will be a regular in my house.

    I had some misgivings with this dish. I was worried the chicken wouldn't cook properly as the Varoma dish was so overloaded - but it did.
    Was a little concerned about the cheese in a curry....
    Decided to make the dish exactly to instructions (except had to go under some weights due to lack of ingrediants) and it was good. It wasn't excellent, but 4 out of 5 of us enjoyed it. It will be a monthly dish here from now on. Thank you for sharing.

    OMG LOVED IT!! 4 in our family, all with different tastes, all loved it and have requested it be a regular on the menu! Gets a little watery at the end of cooking, so I just used a serving spoon with holes in it to dish it up, worked a treat. I also left the peas out completely as no one here is a fan tmrc_emoticons.)

    I have had my new machine for 3 days now, & this was the first main dish I cooked the other night!

    My hubby gave it 9/10, he loved it. He said it was similar to Indian food because of the curry! He likes Indian, & has asked me to make the recipe again Lol

    I gave it 7/10, because by the time i got to eat it, it was half cold. And I think if I served rice with it, it would have been nicer (so its my own fault) - But otherwise the recipe is yummy!

    The recipe says "3 Frozen Peas, Cup" - Im not sure if that is a typing error?? Does that mean 3 cups?? - I added 1.5 cups. And thought it was more than enough!

    I also found the baking & preparation time inncorrect. The chicken needed an extra 15 minutes.

    I didnt have any fresh Colly or Brocoli, so I used frozen instead.

    It makes a big batch, so excellent for left overs! And I will mention that it tasted better the next night.

    I'm making this for about the 4th time (have it maybe once every couple of months). It's not a favourite to become a weekly meal, and we have mixed reviews in our family over it, but it can't be too bad if we keep having it 😉 I personally love it, but hubby is a bit 'take it or leave it'. Kids don't mind it so it's a win as they do eat it! I've also recommended this to a couple of others who have enjoyed it. Will continue to make occasionally. Thank you.

    This sauce is fantastic.
    I made it with leftover sausage instead of chicken, remainder of recipe the same.
    Great way to get the kids to eat cauliflower. They were wise to the other not-so-hidden veggies though so next time I would:
    Steam chicken in top but no steamed veggies, then add chicken, grated zucchini, grated carrot and frozen peas to the sauce and cook for two minutes after step 5, then add whole thing to macaroni as a sauce with grated cheese on top.
