Filling

  • 1 leek, Roots trimmed, white part only.
  • 720 g chicken breast, Chopped in 1 cm cubes
  • 150 g bacon, Diced
  • 1 tbsp Butter
  • 1 tbsp olive oil
  • 1 tbsp flour
  • 2 tsp Dijon mustard
  • 1 tbsp Vegetable stock paste, From Basic Cookbook
  • 1 tbsp crème fraiche
  • 300 g water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Filling
  1. Place Leek in bowl, Put MC in, Chop 3-4 seconds speed 5.

  2. Place all other filling ingredients in bowl (Chicken Breast, Bacon, Butter, Olive Oil, Flour, Dijon Mustard, Vegetable Stock Paste, Creme Fraiche and Water).

    Put MC in.

    Cook 15 mins, 100 C, Counter-clockwise operationGentle stir setting

  3. Construction
  4. Place filling in an ovenproof bowl such as a pyrex dish.

  5. Place sufficient puff pastry to cover the filling on top of the filling (rolled out, from Basic Cook Book).  Tuck edges into the dish.

  6. Beat egg with a fork.  Brush top of pastry with egg.

  7. Cook in preheated oven for 15 mins at 200C.

Tip

Let the pie sit a little while before cutting it into portions.

Leftovers can be divided up and kept in the fridge for the next day.
