Chicken & Leek Risotto

  • 20 grams parmesan
  • 1 leek
  • 1 clove garlic
  • 20 grams Butter
  • 20 grams Evoo
  • 160 grams Aborio Rice
  • 30 grams dry white wine
  • 1 tbsp chicken stock paste
  • 300 grams cubed chicken
  • 60 grams frozen peas
  • 360 grams water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Place Parmesan cheese into mixing blowl and grate 10 sec/speed 10. Transfer into a bowl and set aside. 

    2. Place leek and garlic into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula

    3. Add butter and EVOO and saute 3 min/120C/speed 1.

    4. Add rice and saute 1 min/120C/Counter-clockwise operation/speed 1.5, without measuring cup.

    5.Add white wine and saute 2 min/Varoma/Counter-clockwise operation/speed 1.5, without MC. Scrape bottom of mixing bowl will with spatula to loosen rice.

    6. Add stock, chicken and water and again scrpate bottom of bowl to loosen. Cook 10 min/100C/Counter-clockwise operation/speed 1.5, placing simmering basket instead of MC onto the mixing bowl lid.

    7. Add Peas and cook further 3 min /100C /Counter-clockwise operation/speed 1.5, with simmering basket on top.

    8. Transfer to thermoserver, combine with parmesan and serve.
