Chicken Parma Balls

Ingredients

24 piece(s)

  • 80 grams Parmesan cheese, cut into about 4 pieces
  • 60 grams Tasty cheese, cut into 3 pieces
  • 60 grams onion, red onion is nice
  • 4 sprigs parsley
  • 700 grams chicken breast, 2-3 breasts cut into 4-6 pieces each
  • 70 grams breadcrumbs, fresh is best, you can make these before first step if required)
  • 60 grams pizza sauce, I used 1/2 tomato sauce and 1/2 tomato paste

Recipe's preparation

  1. 1. Preheat oven 180 degrees.

    2. Add parmesan and tasty cheese to bowl and grate for 8 seconds, speed 8, set aside.

    3. Add onion and parsley to bowl, chop for 3 seconds, speed 7.

    4.  Add chicken, half of the reserved cheese (70 grams) and breadcrumbs to bowl and mince for 15 seconds on speed 7 (you can also season with salt and pepper to taste).

    5. Using your hands, shape into balls and place in a lightly greased baking dish. Brush each ball with pizza sauce.

    6. Bake for 12-15 minutes then remove and brush with remaining sauce and scatter with remaining cheese. Bake for another 5-10 minutes until cheese is golden.

    7. Serve with salad or steamed vegetables.

    Added extra 200g chicken, two gloves of garlic, table spoon of oregano and a little extra cheese. Also made a little extra pizza sauce.
    The left over sauce in the pan drizzles on top made them twice as good! Delicious and fairly quick, definitely easy dinner 👌

    This recipe is 5 star - has become a family favourite. I use a pasta sauce and spread a little on the bottom of my dish then add the meatballs, then using a pastry brush apply a little sauce to each meatball. Before adding the extra cheese at the end, I just pour the remainder of the jar of sauce evenly over the meatballs. Delicious every time.

    This was delicious! What I like more was this was such a quick midweek meal that can be whipped up in time. I read the comments below about adding a egg, also about freezing the chicken before blitzing it. I was going to do this, but forgot. I personally don't think it needed the egg or the chicken to be frozen, it was perfect the way the recipe says to make them. I didn't have pizza sauce, I used spaghetti sauce instead. This will be regular dinner in our household. Delish for all ages!

    Family loved these! Used 1 tsp dried Italian Herbs as I didn't have any parsley, and Leggo's pizza sauce to baste. I also turned them over at the halfway point and basted again in more sauce before putting the cheese on. Yummo! Hubby wants to make them into Subs.

    After looking through the comments, I added an egg to the mixture in step 4. The chicken didn't mince up very well for me, so I would recommend having it partially frozen like when you make mince from chicken breast.

    This is a wonderful recipe - easy to make, minimal ingredients , maximum taste satisfaction. I did clone the recipe and added a mozarella cheese centre and it worked out brilliantly.
