Chicken Parma Balls

Ingredients

24 piece(s)

Chicken Parma Balls

  • 80 grams parmesan cheese, cut into about 4 pieces
  • 60 grams tasty cheese, cut into 3 pieces
  • 60 grams onion, red onion is nice
  • 4 sprigs parsley
  • 700 grams chicken breast, 2-3 breasts cut into 4-6 pieces each
  • 70 grams breadcrumbs, fresh is best, you can make these before first step if required)
  • 60 grams pizza sauce, I used 1/2 tomato sauce and 1/2 tomato paste

Recipe's preparation

  1. 1. Preheat oven 180 degrees.

    2. Add parmesan and tasty cheese to bowl and grate for 8 seconds, speed 8, set aside.

    3. Add onion and parsley to bowl, chop for 3 seconds, speed 7.

    4.  Add chicken, half of the reserved cheese (70 grams) and breadcrumbs to bowl and mince for 15 seconds on speed 7 (you can also season with salt and pepper to taste).

    5. Using your hands, shape into balls and place in a lightly greased baking dish. Brush each ball with pizza sauce.

    6. Bake for 12-15 minutes then remove and brush with remaining sauce and scatter with remaining cheese. Bake for another 5-10 minutes until cheese is golden.

    7. Serve with salad or steamed vegetables.

    This was delicious! What I like more was this was such a quick midweek meal that can be whipped up in time. I read the comments below about adding a egg, also about freezing the chicken before blitzing it. I was going to do this, but forgot. I personally don't think it needed the egg or the chicken to be frozen, it was perfect the way the recipe says to make them. I didn't have pizza sauce, I used spaghetti sauce instead. This will be regular dinner in our household. Delish for all ages!

    Family loved these! Used 1 tsp dried Italian Herbs as I didn't have any parsley, and Leggo's pizza sauce to baste. I also turned them over at the halfway point and basted again in more sauce before putting the cheese on. Yummo! Hubby wants to make them into Subs.

    After looking through the comments, I added an egg to the mixture in step 4. The chicken didn't mince up very well for me, so I would recommend having it partially frozen like when you make mince from chicken breast.

    These are delicious! The only change I made is I added a teaspoon of vegie stock and a little water to the sauces, just to keep the balls moist. Easy quick recipe. Will make again!

    This is a wonderful recipe - easy to make, minimal ingredients , maximum taste satisfaction. I did clone the recipe and added a mozarella cheese centre and it worked out brilliantly.

    Made these a couple of nights ago and they were good! Bit dry though and I cooked them for 12 mins initially then a further 7. Tried not to over cook them as there was a comment below theirs was dry also. Not sure why they were like that, but they were still tasty! Might do a bit more sauce next time. Will definitely be trying it again! Thanks!

    these were so easy to make and sooooo yummy!! Kids turned their noses up at first but soon came back for more and requested them for school lunches. Definitely will be making again and again. No more buying a pack of 6 or 8 for $6, this recipe made about 30 (not that I had time to count them they went too fast)

    made this tonite with a couple of tweaks:

    used 2 sprigs of basil and 2 of parsley - instead of 4 parsley

    made the Arrabiata sauce from the Everyday Cooking book (using fresh cherry tomatoes instead of the tinned tomatoes)  - didn't deseed the chilli is as I like the heat and added 5 mins to cooking time and 40 grams water.  this was instead of the pizza sauce.

    i brushed the chicken with the sauce and baked on 220 as I like a bit of browning and crust on mine.  then after turning the balls added the rest of the sauce i made - approx 400g - and followed for the last 10 mins as per recipe.   

    Served with some homemade pita....Huge hit, as my daughter said 'Even Dad would like this'... As I like to experiment when he's away lol.  Have saved the leftovers for lunch tomorrow tmrc_emoticons.)

    Found these to be slightly dry. Not sure if I overcooked maybe? I am going to try steaming for first part of recipe then browning cheese in oven for the second part. Otherwise a good choice for dinner tmrc_emoticons.)
