Chicken Satay with Vegetables & Rice

Ingredients

  • 1/4 tsp fennel seeds
  • 1/4 tsp cumin seeds
  • 1/2 tsp coriander seed
  • 1 tsp Tumeric
  • 4 -5 cloves garlic
  • 1 long Red Chilli (seeds optional)
  • 2 tbspLight Soy sauce
  • 2 Tbsp Oyster
  • 2 tbsp sugar
  • 2 tbspVeg Oil
  • 500 - 600 g chicken, (2 breasts) Sliced 1/2 thickness.
  • Veg of Choice (Carrots batons, Green beans, Brocolli)
  • Garnish with chopped peanuts and wedge of lime.

Recipe's preparation

  1. Add required amount of rice to basket  with the veg and sliced chicken in the varoma.  Cook 12 - 16 mins on Varoma temp, stopping after 8 mins to stir chicken.

    Once cooked put rice in Thermoserver to keep hot and complete cooking.

    Wash and dry bowl thoroughly.

    Place all dry spices and salt in the TM Bowl

    Mill for 1 min, speed 10, set aside

    Place garlic and chilli in the bowl and chop for 8 secs speed 7

    Add remaining sauce ingredients and milled spices, cook for 5 mins , when time up blend for 30 seconds speed 10.

    Combine Vegetables, chicken and sauce.

    Serve with the steamed rice, garnish with chopped peanuts and wedge of lime.

    This was delicious!!! I followed the advice of others and added coconut cream and peanut butter. And also put all back into the bowl on reverse at the end to coat with sauce.  I did find the instructions a little difficult to follow also... especially if you were new to thermo... but in saying that it turned out great and tasted fantastic. Has been added to my "yummy" collection tmrc_emoticons.)

    Wow so yummy, my 4 kids all under the age of 7 loved it and my husband went goo goo ga ga over it. 

    made minor changes when making the sauce I added about 3 Tbsn of peanut butter and a can of coconut cream to make the sauce go farther also instead of the red chilli I had a tspn of curry powder as I have young ones who don't enjoy hot food I put that in with the milled spices.

    thanks for the recipe I've tried a few satays and this is the best.

  • Tasted fantastic, but I too

    Tasted fantastic, but I too struggled a bit with the sauce instructions. It wasn't nearly enough sauce for the quantity of food cooked, so I added milk, balsamic vinegar, heaped tbsp of peanut butter, and 1 tsp of cornflour to thicken it up. I also added all the chicken & vegetables back into the bowl for 5 mins at the end and put it on reverse, speed soft, to really coat the food in the sauce. It was amazing though, and I'll definitely be doing this recipe again. My children, ages 3 and 5 devoured it. I left the chillis out and just added on my plate for a but of a added zing. The turmeric was fantastic, gave the food a great colour tmrc_emoticons.-)  Thanks KirstyE

    This sounds delicious and I have been wanting to try more recipes that cook the whole meal at once. Thanks for putting the recipe up.  I think that I will dry roast the spices first and grind them before cooking the rice. That way I won't need to wash and dry the jug after cooking the rice, I will rinse it out, throw in the onion and garlic and chope them with the jug still wet and continue.

    I made this for the first time tonight and my husband and I both love it!  I added a tablespoon of peanut butter (as the previous comment suggested) and used carrots and snow peas (hubby doesn't like green beans or broccoli).  It was delicious. Love

    tmrc_emoticons.) I made this recipe today but added a large tabs of peanut butter to the sauce....thought it tasted great ...but next time I cook it I might vary the sauce maybe less oyster sauce next time....
