Lime and Lemongrass Chicken

  • 6 slices ginger
  • 6 Kaffir lime leaves
  • 4 stalks lemongrass, trimmed, white part only
  • 1 long red chillies, trimmed
  • 20 g coconut oil
  • 600 g chicken, cubed
  • 400 g coconut cream
  • 2 tbsp fish sauce
  • 1 lime, juiced
  • coriander leaves, to serve

Recipe's preparation

    Lime and Lemongrass Chicken
  1. Place the ginger, lime leaves, lemongrass and chilli in TM bowl. Process on Speed 7 for 5-10 secs.

    Add oil and saute 3 mins at 100 degrees C on Speed 1.

    Add the coconut cream and cook for 10 minutes at 100 degrees C on Speed 1.

    Add the fish sauce and lime juice and cook for 9 minutes at 100 degrees C on Reverse/Speed 1.

    Add chicken and cook for 6 minutes.

    Add chopped coriander leaves and serve with steamed vegetables rice.

    I made this today. I doubled the recipe and it was very tasty. However the sauce was too thin, so I took out the chicken, chopped a heap of sweet potato and cooked them, and then threw in some julienned red capsicum for a few minutes at the end. Much better! Very yummy though! Thank you x

    This was really yummy!! I adhocked it a bit, as only cooking for one. I used the lime zest too in the first step and added lemongrass powder as I didn't have fresh. I halved the coconut cream and cooked sauce for 6 & 6 minutes. I used one chicken breast sliced and added carrot strips with the chicken (cooked a tad longer than 6 minutes) and, silver beet for a couple of minutes at the end. Had no coriander (a rarity for me :O) - garnished with fresh sorrel instead. Heated up leftover steamed rice - done! 

    This made for an amazing Friday night dinner -and, healthy too.

    Was so tastey! I felt the chicken was a little bland and next time will cook it longer in the sauce, not just for 6 mins. Also think coconut cream would be great in it as the milk was a little runny. Loved the lemongrass and kaffir lime leaves in it. Definitely will make again. Thanks. Also served it with cauliflower rice. YUM! tmrc_emoticons.)
