Creamy beef curry with cauliflower rice (kid friendly)

Ingredients

  • 500-700 grams cauliflower florets
  • 2-3 cloves garlic
  • 2 brown onions, peeled and halved
  • 40 grams Butter
  • 3 tbsp curry powder
  • 1 tbsp tumeric ground
  • 2 tbsp wholegrain mustard
  • 2 tbsp sugar
  • 1 tbsp white vinegar
  • 1000 grams cubed chuck steak
  • 400 gram Tin crushed tomatoes
  • 2 tbsp Thermomix stock concentrate
  • 150 grams cream
  • 300 grams mixed vegetables of choice, (potato, carrots, broccoli, peas etc)

Recipe's preparation

  1. 1.Put cauliflower into TMX and chop on Counter-clockwise operation speed 5 for 7 seconds, set aside in varoma tray

    2. Put garlic cloves into TMX and blitz 3 seconds No counter-clockwise operation speed 7

    3. Add onions and blitz 5 seconds speed 7

    4. Scrape down sides of bowl and lid, add butter and sauté 3 mins 100 degrees speed 1

    5. Add curry powder, turmeric and mustard and sauté 2 mins 100 degrees speed 1

    6. Add sugar and vinegar, mix 5 seconds speed 3

    7. Add cubed beef, tinned tomatoes, TMX stock and cook 100 degrees 40mins Counter-clockwise operation speed soft.

    8. Add cream and cook for 10 minutes Counter-clockwise operation speed soft

    9. Add vegetables to varoma bowl (or some may fit in TMX bowl). Put varoma on and cook 20 minutes Counter-clockwise operation VAROMA temperature speed 2

Tip

I found the cauliflower rice was a bit watery, so you may want to give it a bit of a squeeze out before serving.

I add the cooked vegetables to the tm bowl and give a little manual stir before serving as my kids are fussy and this helps hide them!

    Loved it!!!! I only used 1 tbsp of curry powder and double the cream but that was only so my 4 and 6 year old would eat it too (think hubby and I would prefer the original recipe but still a great meal).

    I never thought I'd enjoy a curry powder curry but this was beautiful! Wife loved it too, bonus. Fussy 10 and 7 boys loved it as well. I just did the curry, no rice, served with naan bread. Great recipe Ty.

    Have made twice now, was worried about it being spicy due to amount of curry powder, but need not have worried, it was just right. Enjoyed by all 3 kids and hubby. Gave an extra 20mins cooking time before adding cream just to make sure meat would be tender. Freezes great too. Thanks for posting recipe tmrc_emoticons.)

    Didnt make the cauliflower rice but the curry was delicious added lots of vegies carrots, potato, capsicum and mushrooms.  Only added 1 1/2 tabs of curry powder also as kids are not keen on strong curry flavour although I would have preferred more curry.

    Will be making this one again.

    I only had 250gms of meat so added 300gms of mushrooms along with the rest of my veggies. I also took note of your tip and squeezed out the extra water in the cauliflower rice which worked well.

    Served it over steamed zucchini, beans and brocoli. I will definitely be making this regularily. It would be awesome with some nan bread too Love

    Tried this one last night and its definitely a winner here, has a really nice flavour to it, not just a typical curry powder flavour.. hubby has the left overs for lunch today and says he would be quite happy to add that to the list of regular dinners tmrc_emoticons.-) I used only half the amount of beef (gravy beef) and cut back on all the ingredients and a little on the time. I did the meat for 20 minutes, then added cauli rice (yum!) and carrots to varoma for another 10mins, then broccoli and zuccini for another 10. All seemed to work ok, just need to judge how long the meat needs and adjust veges to suit remaining time.
