Creamy Lamb Curry

INGREDIENTS

  • 1kg diced lamb, or chicken/ beef
  • 30 g Butter
  • 2 brown onions
  • 1 --- small knob of Ginger
  • 2 --- cloves garlic
  • 1 tbsp ground tumeric powder
  • 2 heaped tablespoons Mustard seeds, or powder
  • 3 tbsp curry powder/spices, or curry seasoning
  • dash white wine vinegar
  • 2 --- Large Red Chillis, seeds removed- optional of course, and only use 1 if you would like to reduce the heat
  • 2 tablespoons palm sugar, grated, or raw sugar
  • 400 g fresh tomatoes, or canned
  • 2 MC coconut cream, or cream
  • half juice of lemon, quarter and place 1 qtr in for flavour
  • 1 Lemon quartered, for serving
  • 2 tablespoon TM Stock Concentrate
  • 100 grams Green beans, trimmed and halfed
  • Coriander for garnish
  • 150 grams washed baby spinach, (Optional)

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Recipe
  1. Place garlic cloves, ginger and chilli into TM and blitz 5 seconds speed 7

    Add quartered peeled onions and blitz 6 seconds speed 7

     

  2. Scrape down sides of bowl, add butter and sauté 3 mins 100 deg speed 1

    Add curry powder, turmeric and mustard seeds and sauté 2 mins 100 deg speed 1

     

  3. Add sugar, white wine vinegar, and mix 5 seconds speed 3

     

    Add diced lamb, fresh cut into halves (or canned) tomatoes, TM stock, lemon juice and a quarter of lemon or the zest and cook 100 degrees 60mins reverse speed soft.  Counter-clockwise operationGentle stir setting

    30 mins through cooking, add coconut cream while still cooking

    Add in green beans for texture these will not require a lot of cooking. 

     

  4. When cooking is complete, check for seasoning and add salt and white pepper if needed

     

    If using baby spinach leaves  place in thermo server and pour curry over the top, the spinach doesnt need to cook, only heat through. 

    Now you can cook your Rice.

  5. For Serving, garnish with lemon and coriander. The fresh lemon sqeezed over is tasty.

    Made this tonight for the family. I didn't have mustard seeds or powder so added wholegrain mustard. Also added carrot and some red capsicum and left out the beans. The flavours were amazing, everyone loved it. Will definitely be making this again!

    Thank you for this recipe. It was so yum. I have never made a curry from scratch and was so impressed with my effort. So was the rest of my family. I used hour own mutton, cooked it half our longer. It was delicious and not too tough.

    I've made this recipe a few times, but this evening I substituted the meat for vegetables and it was just as good. I used 2 large potatoes, 3 carrots and half a cauliflower. I think the lamb could be substituted for chicken as well with equally good results.

    This recipe is one of the best I have made and I regularly try different recipes on site, my husband said it tasted better then our Indian restaurant and wants me to make it weekly. I only had 500 grams of lamb and added 3 chillis and halved all other ingredients except for canned tomatoes I used 400 grams and added an extra tablespoon of cornflour. So good would definetly recommend, thank you so much for sharing. Didn't realise I only marked 3 stars have been trying to update to 5 but site won't let me would give 10 if I could.

    Super yummy! Halved recipe except for the coconut cream & the tomatoes as I had quite a bit of lamb but my family isn't keen on too much curry flavour. I too used left over roast lamb and only cooked for a total of 20 mins...sooo quick & easy

    A massive hit with the entire family. I too only used one chilli. I also extended cooking time by 10 minutes to get the lamb to 'fall apart'. Served with coconut rice over a bed of spinach.

    This is sensational! So much better than going to a restaurant. I didn't have the chilli so added dried chilli seeds  instead and it was divine. The meat just fell apart!  I made a beautiful coconut rice with it in the Thermomix. Definitely a family favourite.

    Awesome curry - I used fresh tomatoes & blitzed for 10 secs before adding lamb.  Also needed more curry powder & 2tbs of cornflour to get right consistency.  Flavour was amazing
