Crust

  • 1/2 cup Wheat biscuits or weetabix
  • 3 garlic cloves
  • 2 tablespoons rosemary leaves
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil

Meat

  • 2-3 Racks of lamb, Frenched
  • 2 tablespoons Dijon mustard
  • Salt & pepper to taste
  • 2 tablespoons olive oil

Vegetables

  • seasonal vegetables, cut small
  • 500 g Sweet Potatoes, cut in 3-4 cm cubes
  • 15g Salted butter
  • 250 g water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Crust
  1. Preheat oven on 230C 

     

    1. Place garlic rosemary in Bowl. Chop 3 sec sp7

     

    2. Add weetabix, oil, salt and pepper and chop 4 secs / sp 5 until you have fine crumbs.

  3. 3. In a metal pan, heat oil and sear lamb racks all on sides to seal the flavour. Set aside for a few minutes.

     

    4. Place sweet potatoes in bowl and chop 3 sec sp 7

     

    5. Add 250g of water to the bowl.

     

    6. Place all cut season vegetables in varoma. 

     

    7. Place lid and varoma on top. Cook 15 mins Varoma temperature.

     

    8. Paint lamb rack with dijon mustard and roll in crumbs. Make balls with leftover crumbs and mustard.

     

    9. Place meat and balls on an oven tray and cook at 230C for 12 to 18 mins depeding on how rare you like your lamb. After cooking let the lamb rest for 5-7 minutes.

     

    10. Meanwhile, check the sweet potatoes and vegetables are cooked. If cooked, set vegetable aside. Alternatively extend cooking for a few more minutes at a time, ensuring there is enough liquid in the bowl. 

     

    11. Add butter to the bowl and blend 10 sp 7.

     

    12. Serve on a plate with lamb and enjoy!

    Has got to be the most delicious lamb I have ever had! So easy to make and the crust on the lamb is spot on! Is a regular meal
