Easy Beef Curry
- 1 brown onion, large, cut in half
- 20 grams fresh ginger, cut in rounds
- 2 garlic cloves
- 1 fresh red chilli, deseeded if preferred
- 20 olive oil
- 2 tsp ground turmeric
- 2 tsp Ground Coriander
- 3 cardamom pods, bruised
- 2 tsp garam masala
- 400 gram canned diced tomatoes
- 1 tbsp beef stock paste
- 1 tsp sugar raw
- 1000-1200 grams Beef, casserole or shin beef, diced large
- 2 heaped tbsp double cream
- 1/2 bunch fresh coriander, optional

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Place fresh coriander to bowl chop 3sec/speed 7. Transfer to bowl and set aside.
- Add onion, garlic, ginger and chilli to mixing bowl"Closed lid" chop 3sec/speed6/MC on. Scrape down sides of bowl.
- Add oil to mixing bowl. Cook 5mins/100deg/speed 1 MC on
- Add spices, avoiding blades. Cook 2mins/100deg/speed 1 MC on
- Add tomatoes, beef stock paste, sugar, water, diced beef. Cook 60min/100deg/slowest speed/reverse MC on
- Add double cream and reserved coriander into mixing bowl and combine with aid of spatula. Season to taste.
Serve with steamed rice and naan bread.

Tip
Reduce beef to 800g and add vegetables (potatoes or carrots etc)
I like a runnier sauce but if you prefer a thicker sauce, mix a little cornflour with water and add in the last few minutes of cooking.
