Easy Mango Chicken Curry

  • 1 onion, Halved
  • 2 cloves garlic
  • 30 grams oil
  • 1-2 tbsp Keens Curry Powder
  • 500 grams Chicken Thigh or Breast Fillet, Trimmed
  • 1 can Mango slices in syrup, NOT Drained
  • 1 can 270ml coconut milk or cream
  • 1 package Frozen steam veg

Recipe's preparation

  1. 1. Chop onion and garlic SP 7, 5sec.

    2. Add oil.  Saute 2 mins, SP 1, 100C

    3. Add Curry powder 1 min, SP 1, 100C

    4. Add Chicken Counter-clockwise operationGentle stir setting 30sec, or until coated.

    5. Add Mango, Coconut Milk and Frozen Veg Counter-clockwise operationGentle stir setting 15min, 100C

    6. Check on consistency.  If needed give a couple of minutes more with the MC off.

     

    Serve with Rice, pappadums and natural yoghurt.

Tip

For the curry pictured I used 2 tbsp of the curry powder.  This was quite warm for myself and husband but too spicy for our toddler, who normally does quite well with mild curries.  Next time I will only do 1 tbsp and see if she is able to cope better.  At the time I had no natural yoghurt in the house, so this may have helped her as well.

 

I always have the select or heinz steam veg pouches in the freezer.  This is what I used as 1 package of veg.

    I just made this & am sorry to say it was awful. Bland & watery & i drained the juice as others had suggested to. I tried one spoonful & won’t be eating it... such a waste 😫😫

    Made 2 batches of this, one for the kids with a small amount of currie, they couldn't eat it fast enough! The adults all loved the stronger flavour with more currie. Next time I would use fresh veg instead of the frozen as it seemed to get quite overcooked. Will be on our menu plan for sure! Thanks for the easy recipe!

    Made this for the family tonight and it went down a treat. I didn't have a full can of mangoes however had 3 mango cheeks and about half the juice and this made for a really nice sauce. I put more vegies and chicken to help stretch it out and used 1.5 tsp of curry which gave it a nice hum.  I served it up with some Quinoa and Brown rice and the kids loved it tmrc_emoticons.)

    Made this last night and kids loved it but finished product was too watery. I would omit mango syrup but rather drain mango and discard the fluid. It then becomes the correct consistency. I also added a tablespoon of Cajun spice just to give it extra zing! Otherwise...good recipe.
