Hoisin Chicken and Steamed Coconut Dumplings

Ingredients

Steamed Coconut Dumplings

  • 1 can coconut milk
  • 2 cans Self Raising Flour, use empty coconut milk can
  • 8 cupcake liners
  • 1 pinch salt

Hoisin Chichen

  • 2-3 chicken breasts, cut into 1cm thick strips
  • 1 bunch florets of broccoli or broccolini
  • 100 grams mushrooms, sliced
  • 2 tablespoons hoisin sauce
  • 1 lime juice
  • 3 spring onions, sliced

Serve with Your Choice of the Following

  • sesame seeds, toasted
  • pickled ginger
  • coriander
  • lime wedges
  • hoisin sauce
  • chilli

Recipe's preparation

    Steamed Coconut Dumplings
  1. 1) Add coconut milk, flour and salt to TM

    2) Mix speed 7 for a few seconds 

    3) Knead speed until it form a solid mass

    4) Briefly hand knead, and divide into 8

    5) Roll into balls and place in cupcake liners

    6) Place on top layer of the varoma, add water to bowl and steam for 20 minutes, varoma temp

  2. Hoisin Chicken
  3. 1) Mix all ingredients together in a bowl and allow to marinade

    2) At the same time as you are cooking the dumplings, place half of ingredients in bottom tray of steamer and cook for 10 minutes or until chicken is cooked

    3) Place first batch in the Thermo Server to keep warm while you cook the second batch

    I made this using gluten free flour. It made more than 8 dumplings but worked well. Served with more hoisin sauce as it needed a sauce to go with it. Hubby and kids gave it the thumbs up.

    Hi, you put the chicken and vegetables in the steamer/varoma, only water in the bottom, so reverse not nessesary (you dont marinade in the TM, just in another random bowl). Speed not really a problem either as just to circulate water, so I would use speed 2 when steaming in the varoma.

    No cooking speeds, etc which would be handy, particularly when cooking chicken at the same time as the dumplings. Assune reverse necessary due to broccoli and mushroom content.
