Hunters Lemon Chicken & Veg Rissoles

Ingredients

Lemon Chicken & Veg Rissoles

  • 30 g Parmesan cheese, fresh, Grated, or grate first, 7sec/Sp7,set aside
  • lemon zest, (1lemon, no pith)
  • 2 cloves garlic
  • 1 sprig basil, fresh, Leaves only
  • 3-4 sprigs flat leaf parsley, Leaves only
  • 2 pieces Stale bread, multigrain, Tear into small pieces
  • 500 g Chicken breasts, Cut into small chunks,this can still be a little frozen
  • 10 g sesame seeds
  • 1 egg
  • 50 g Frozen baby peas
  • 50 g frozen corn kernels

Recipe's preparation

    Lemon Chicken & Veg Patties
  1. 1. Place lemon zest in TM bowl, grate 10sec/Sp 7, scrape sides down. Add garlic, grate 5sec/Sp 7, scrape sides down. Add Basil & Parsley, chop 5sec/Sp 7, scrape sides down. Add bread pieces, grate 5sec/Sp 6. Set mixture aside.

    2. Place chicken breast chunks into bowl, mince 7sec/Sp 7. This should be minced fairly finely.

    3. Add breadcrumb lemon herb mixture, Parmesan, sesame seeds, egg, peas & corn to bowl. Mix 30-40sec/Counter-clockwise operation/Sp 3, or until well mixed.

    4. Form approx 10 patties, roll in small amount of extra flour. refridgerate for at least 30min.

    5. Heat enough rice bran oil in a fry pan to cook up the sides of rissoles, approx 1cm deep. Cook approximately 5min each side, or until a light golden brown & cooked through.

Tip

These can also be made into burgers for chicken & veg burgers.

A fresh Chilli can also be added in with the garlic in step 1.

For a "Thai" type version, leave out the Parmesan cheese, add a chilli in with the garlic and then fresh Coriander leaves in with the Basil & Parsley in Step 1.

Also, add a pinch of sea salt and pepper if you need to at Step 1 if you think you want a little more flavour.

    Millner9: Hi, sorry you didn't quite like these. I do change the flavour up sometimes too. Adding chillies and chop just before the herbs. Or you can also add curry powder. I also had a dryness problem once, it turned out to be the chicken breasts from the supermarket. I bought quite a bit and also used them for a curry, which was also dry. I get mine from Lenards now.

    Hi, thanks for the rating, you could possibly add onion but quite often when raw onion is added to rissoles they can have the effect of giving people indigestion. You could add spring onion or chives when you put the parsley & basil in the bowl to chop. This may give you that flavour you're looking for, feel free to try my other recipes, thanks again. Cheers

    Thanks for commenting, glad you still liked them, I think I will edit my tips by adding my last reply about adding chilli & Coriander to make it a Thai type of rissole and of course salt if people prefer.

    I'm always looking for differetn things to try and i find there aren't many chicken rissole recipes out there. These were good, the lemon flavour wasn't to overpowering (im not a huge fan of lemon) but i did find it was missing something and after reading the comments i agree a bit of salt and chilli (or some other flavour) would be good to give it that extra something tmrc_emoticons.)

    Thanks for the rating, much appreciated. Yes I agree with chilli for sure, I'm not a huge fan of salt as my mum's been on a health kick for the past 50 years so I wasn't brought up on it... LOL..

    Another option to this to make it a "Thai" version would be to leave out the Parmesan and add 1 chilli with the onion and add a little fresh coriander with the other fresh herbs.... I'm thinking I might try that very soon.. Big Smile

    This recipe was quick and easy to make and the family really enjoyed it. I don't usually try a recipe that hasn't been rated but I liked the sound of it and thought someone has to be first!
