Ingredients

10 piece(s)

Coating

  • 2 tablespoons salt
  • 1.5 tablespoons black peppercorns
  • 1.5 tablespoons dried onion flakes
  • 1 tablespoon dried garlic granules
  • 1 tablespoon dried rosemary
  • 1/2 tablespoon dried basil
  • 1/2 tablespoon paprika
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon yellow mustard seeds
  • 1 teaspoon dried thyme
  • 1 teaspoon dried tarragon
  • 350 grams plain flour

Chicken

  • 2 chicken breasts, cut into 5 strips each
  • 2 eggs, beaten in a bowl
  • oil, for frying
5

Recipe's preparation

  1. Place all spices and herbs into tmx.
Blitz on speed 10 for 30 seconds. Scrape down. Repeat. You are wanting a fine grind.
Add flour and blitz on speed 10 for 20 seconds.
Have a taste of your flour. You can tweak the quantities used to suit your tastes.  Add additional flavour of needed and blitz again on speed 10 for 30 seconds to ensure its well combined. If you feel the flavours are too intense you can add more flour.

Pour 1/3 of the flour onto a plate.
Coat chicken strips in egg and then flour. I then put them in egg and then flour again. This gives it a realcrispy coating.
Place oil into pan on a medium heat. You need enough oil to shallow fry your strips.
Fry a few strips at a time. Don't overload the pan.
Cook until white and cooked through. The time will vary on the size of your strips. Just watch them.
    Drain on paper towel.

Tip

If you cant have eggs in your house buttermilk is a great substitute.
Rice flour can be used in place of plain flour. Results will differ slightly.

The coating is enough for three meals. Trust me, you want this coating in your pantry so stick to the full recipe and store the excess in an airtight container.

We use this regularly for school lunches. One chicken breast sliced = 5-6 chicken strips. Kids love them with salad in a wrap.

We only do one coating of egg/flour.

This really surprised me! It was delicious! I didn't have the dried onion or garlic, so used fresh. Also used some fresh herbs and added chilli flakes and chilli powder. The coating still formed nicely with the extra moisture.

Great alternative to KFC and what ever they put in their coating. Love that i know exactly what is going in it and it tastes fantastic.
Made too much chicken so have frozen the uncooked pieces for next time, also have some flour left over. Keen to try it in smaller pieces next time as "popcorn chicken"

Fried as per the recipe some had them in burgers and some had in a salad it was all a huge hit with all the family.

Had some seasoning left over for next time.

Thank you for such a yummy recipe. Smile

Absolute hit in our house. I didn't have the mustard seeds or onion powder but tasted amazing just the same. Used tenderloins the first time for hubby and myself. The next day I ate one cold and Mr 6 asked to try it. He loved it and asked me to make more. Last night I made smaller pieces and told him they are mummy nuggets. He ate all I cooked and told me, "You are the best parent ever because of that yummy chicken you made me!"

Not exactly KFC but an amazing mix to use in not just coating chicken. I used it instead of plain flour in the basic cook book bechemal recipe for a seriously tasty sauce over broccoli and cauliflour. I also plan to use it to coat and roast broccoli or cauliflour on its own!

    Submitted by Nerri_87 on 4. January 2017 - 22:16.

I made this when I first got Thermy and haven't since. I had some oil ready to go from honey chicken the other night and wanted to use it, so thought this would be perfect. I made it into popcorn chicken size. It doesn't taste anything like KFC but that's ok, it makes me sick anyway lol. Flavour was great but I did find it a bit floury if that makes sense. Would be perfect if that flour aftertaste wasn't there. It was the same the 1st time I cooked it as well. If anyone has suggestions of different flour to use or to get rid of that taste, I'd love to know.

Anyway, Anything that my 2 year old eats gets a 5 star from me 😃 No leftovers for her tonight.

Finally tried this last night (after filling christmas hampers with it!) and it was delicious! Must say, my partner and I both thought it wasn't exactly the KFC flavour but that can't be easy to nail, likely the peanut oil I fried it in!

  • Made these as drumsticks and

    Submitted by deztraction on 29. October 2016 - 20:38.

Made these as drumsticks and cooked them both the air fryer and shallow fried.

Family agreed air fryer was hand down better.

Preheat your airfryer to 200 deg.  Place on wire rack for ten min, turn over and do another ten min on 160 deg.

Remember to brush with oil each time.

Servered with coleslaw and home made fries.

Will be making these again for sure.

I'm just a teenage dirt bag baby.. I listen to Iron Maiden., no wait.. I don't even like that song.

Have named my thermo Alice.. because she's always in the kitchen, and also I'm waiting for my husband to ask me "Alice?! who the F*ck is Alice"

    Submitted by Rebecca1983 on 12. August 2016 - 13:25.

Yum-my!! I think I will put less pepper in next time as it might be a bit spicy for my girls (and I accidentely put in a tbs of thyme rather than a tsp) but this was delicious.  I dunked in egg then coated in seasoning, egg again and seasoning using tenderloin sized pieces then baked in the oven, turning once until cooked.  Loved it!!

    Submitted by Brookebethell on 2. August 2016 - 18:29.

Great recipe but it didnt taste much like KFC chicken. We found the bigged the pieces of chicken the more bland it tasted. The second time we used it we made 'Pop corn chicken" and it was alot better! When i make it next time i will slightly tweek it to our liking.
