Lemon Chicken and Quinoa Soup

Ingredients

Step 1

  • 1 Large carrot
  • 1 onion
  • 2 sticks Celery
  • 2 tsp Minced garlic
  • 2 tbsp olive oil

Step 2

  • 1 cup milk
  • 1 tbsp corn starch
  • 2 chicken breasts
  • 2 cups chicken stock
  • 1/2 cup quinoa uncooked
  • 1/2 cup lemon juice
  • 2 bay leaves
  • 1 tsp Tarragon
  • 1 tsp chives
  • 2 tsp lemon zest

Recipe's preparation

    Step 1
  1. Peel, top and tail carrots, peel and quarter onion and add with celery, garlic and olive oil to bowl.  

  2. Turbo for 5 seconds or until chopped. 

  3. Cook 100C (212F) degrees, reverse for 10 minutes. 

  4. Step 2
  5. While step 1 is cooking prepare step 2 ingredients including dice chicken, chop herbs, and juice and zest lemon.

     

  6. Combine cornstarch and milk and add to the bowl with the rest of step 2 ingredients

  7. Combine cornstarch and milk and add to the bowl with the rest of step 2 ingredients

  8. Cook 100C (212F) degrees, reverse for 20 minutes
