Lime and Lemon Chicken with Rice

Main Dish

  • 1 onion, medium
  • 4 centimetre piece lemongrass
  • 6 Kafir Lime Leaves
  • 2 tablespoons olive oil
  • 3 tomatoes, medium, cut in half
  • 2 chicken breasts, chopped
  • 300 grams pumpkin, peeled, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon tamarind concentrate
  • 0.5 litre chicken stock
  • 100 grams green beans, chopped (optional)
  • 200 grams bok choy
  • 15 grams fresh coriander

Recipe's preparation

    Main Dish
  1. 1. Chop onion, lemon grass and kafir lime leaves and tomatoes for 3 sec/ speed 7

    2. Add oil and cook 3min/ Varoma/ speed 1

    3. Add chicken, pumpkin, lime juice, fish sauce, tamarind and stock and cook for 17min/ 100 degrees/ reverse/ speed 1

    4. Add beans and bok choy and cook for 3min/ 100 degrees/ speed 1

    5. Serve with rice and fresh coriander (optional)
