If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place garlic and onion into TM bowl chop 3 sec / spd 5
Add oil to TM bowl and saute 3 mins / 100º / spd 1
Add sugar, chipotle paste and chopped tomatoes, mix 30 sec / spd 2
Add chicken and cook 20 mins / 90 º / "Counter-clockwise operation" spd 1. It doesn't matter if your chicken gets shredded, it is meant to be slightly shredded.
Serve with rice. If making rice in your Thermomix, place the stew in a thermoserver, or saucepan and gently simmer while cooking rice.

Tip
I can't always find chipotle paste, but have found a small tin of "chipotle peppers in adobo sauce". All I did, before starting the recipe, was put the contents of the can into TM bowl and blitzed it 30 sec / spd 5, then transferred into a small freezable bowl. Don't worry about rinsing TM bowl before starting recipe, just scrape out as much as you can!
