Paleo Chicken Parma

Ingredients

  • 2 chicken breasts
  • 2 eggs
  • 250 g almonds
  • 50 g Parmasen Cheese
  • 1 tbsp parsley
  • 1 tbsp thyme & rosemary
  • 4 tbsp coconut oil
  • 500 g quirky cooking bbq sauce
  • 4 slices prosciutto
  • 3 Zuchinnis, shredded into noodles
  • 30 g Butter, Everyday cookbook
  • 1 tbsp Garlic Salt

Recipe's preparation

    Paleo chicken Parma
  1. 1. Place lmonds in TM bowl and Mill 10 seconds / speed 10 set aside.2. Place Parmesan cheese, thyme rosemary and parsley in TM bowl and mill / 4 seconds / speed 103. Add Almonds to the Parmesan cheese mixture and mix 6 seconds / speed 6 remove from bowl and place in a bowl shallow enough to allow you to coat the chicken.4. Add two eggs to the TM bowl and beat 5 seconds / speed 6. Place eggs in a separate shallow bowl.5. Dip each chicken piece in the eggs, fully coating it, and then toss in the flour mixture until covered.6. In a pan over medium high heat, heat the coconut oil then pan fry each chicken piece until browned on each side (about 2-3 minutes per side).7. Pour 1 cup of the sauce in the bottom of a baking dish, and place chicken on top in a single layer.8. Cover the chicken with the remaining sauce and prosciutto, the slices of gouda cheese and remaining gruyere cheese on top.9. Bake at 180 degrees Celsius for 20 minutes.10. Place baking dish under grill for 3-5 minutes until the cheese is starting to brown and bubble.11. Toss the cooked Zucchini with the butter and garlic salt, and serve with the chicken.

    Big hit in our family!! Even my 3 year old who's not eating well atm ate all her dinner! Well all except the bacon (used in place of prosciutto), as my hubby said if bacon was the worst part of the meal then it must have been good  tmrc_emoticons.;)

    Hi there,

    There are a couple of different versions of 'Paleo' out there.

    But thank you for pointing that out.

    There are a few different strands of Paleo -

    -Some who exclude dairy,

    -Some who include dairy - traditionally High fat low carb paleo

    -Some who exclude fruit all together.

    If you can tolerate the casein protein in dairy then try to use a preferrably a raw milk cheese - you can find this via Bruny Island Dairy in Tasmania.

    What ever style you follow happy cooking!
