- 2 tablespoons salt
- 1.5 tablespoons black peppercorns, whole
- 1.5 tablespoons dried onion flakes
- 1 tablespoon dried garlic granules
- 1 tablespoon dried rosemary
- 1/2 tablespoon dried oregano
- 1/2 tablespoon yellow mustard seeds
- 1 teaspoon dried thyme
- 1 teaspoon dried tarragon
- 350 grams plain flour

- 2 eggs, lightly beaten in a bowl

Recipe's preparation
Place all spices and herbs into tmx. Blitz on speed 10 for 30 seconds. Scrape down. Repeat. You are wanting a fine grind. Add flour and blitz on speed 10 for 20 seconds. Have a taste of your flour. You can tweak the quantities used to suit your tastes. Add additional flavour of needed and blitz again on speed 10 for 30 seconds to ensure its well combined. If you feel the flavours are too intense you can add more flour. Pour 1/3 of the flour onto a plate. Coat chicken pieces in egg and then flour. I then put them in egg and then flour again. This gives it a real crispy coating. Double coating is the key. Place oil into pan on a medium heat. You need enough oil to shallow fry your pieces.
Fry about 10 little pieces at a time. Don't overload the pan. Cook until white and cooked through. The time will vary on the size of your pieces but it was about 3 mins each side. Just watch them.Drain on paper towel.

Tip
If you cant have eggs in your house buttermilk is a great substitute.
Rice flour can be used in place of plain flour. Results will differ slightly.
The coating is enough for three meals. Trust me, you want this coating in your pantry so stick to the full recipe and store the excess in an airtight container.

I used the entire mix for one meal, so will make a double batch in the future. I can see this will now be a staple!
Not sure if the tablespoon used in the recipe was a 20ml or 15ml. I used an Australian standard 20ml tablespoon but might try a 15ml next time as it was a little strong on the salt and pepper (I did double coat).

Thanks for this recipe my children absloutely loved it as did my husband. They said it is better than KFC! I shallow fried it in rice bran oil and put in the lesser amount of peppercorns and it still had loads of flavour.

Yuuuuuuum! I followed the recipe exactly but added just a touch less peppercorns. I think the kids preferred the single battered pieces as they were less spicy. Hubby and I loved the double battered pieces. I uses 1.5 chicken breasts and it fed 4 of us for lunch and I have 2 morning teas worth of leftovers for hubby.

Yum! We are a bit spice sensitive in this house so I reduced the peppercorns to 1 teaspoon and increased the flour to 400g (using GF flour). Also because we don't have tarragon I used 1/3 tsp fennel seeds. When coating I used soy milk as we are egg and dairy free. These turn out brilliantly and everyone loves them. Thanks!!

Great recipe really tasty! my fussy 2 and 4 year olds ate it. I added less pepper and mustard seeds for my kids. My son is dairy and egg free so I used Orgran no egg egg replacer instead of beaten eggs and worked just as well. YUM thanks

This is by far my favourite thermomix recipe. My fussy son who struggles to eat meat, will devour a large chicken breast when prepared like this. I make up the flour and keep it in a bag in the freezer. So quick and easy to cook for an after school snack when the flour mix is ready to go.

Yum. My 3yo loved this. Think I'll make strips next time too as was time consuming to coat. Can see why having the flour mixture pre-made would make it faster. I put flour mixture in a bag and shook it to coat which sped up my 2nd batch and still worked well. Coating in Greek yougurt a good idea!

Very good! Agree the double coating makes them! I served with hummus, broccoli salad and wraps. Everyone gobbled it up. Was surprised by how far 2 chicken breasts went. This is a great mix and versatile to boot, however I found the double dip way too salty and peppery even after adding a heap of extra flour, hense I stuck to one coating, still turned out nice and crispy. Delicious as a coating for salt and pepper squid and herb flavoured schnitzels.
