Bun

  • 1 teaspoon dried yeast
  • 1 teaspoon salt
  • 225 g water
  • 500 g plain flour
  • 1 teaspoon baking powder
  • 2 tablespoons sugar
  • 1 tablespoon oil
  • 1 tablespoon rice wine vinegar

Fillings

  • 1 carrot, finely shredded
  • 1 teaspoon salt
  • 50 g rice wine vinegar
  • 600 g pork fillet
  • 2 spring onion, thinly sliced
  • 50 g hoisin sauce
  • 3 teaspoons sesame oil
  • 2 teaspoons honey
  • 1 teaspoon cornflour
  • 1/4 teaspoon Chinese five spice powder
  • 1/4 teaspoon dried chilli flakes
  • 70 g water
  • Coriander Sprigs, to serve

Recipe's preparation

    Preparing the dough
  1. Put yeast, salt and water into mixing bowl. 1:30 min, 37 deg, sp 1.
  2. Add plain flour, sugar, baking powder, oil and vinegar to mixing bowl. 3 min,Closed lid,Dough mode.
  3. Turn dough out in a greased bowl and cover. Stand in a warm place for 1 hour or until double in size.
  4. Then punch down dough. Divide into 8 portions. Roll each into a ball. Place on rolling mat. Roll into 5 mm thick round shape base.
  5. Brush each dough piece with oil and fold in half.
  6. Stand in warm place for 30 minutes or double in size.
  7. Place 900 water in mixing bowl. Put dough in varoma tray 10min, Veroma, sp 2.
  8. Carrots
  9. Finely shredded carrot. Place in a bowl. Add rice wine vinegar and salt. Cover and stand for 30 min.
  10. Pork filling
  11. Cut pork into thin diagonal strips. Place in bowl with spring onion, hoisin sauce, sesame oil, honey, cornflour, five spice, chilli and water. Mix well and marinate.
  12. In a high heat pan, stir-fry the pork until browned.
  13. Bun
  14. Drain carrot. Fill buns with pork mixture, carrot and coriander and serve.

    I'll definitely be making these crowd pleasers again. I think this recipe is better than JO's comfort food. I may have over crowded my steamer a little, so will watch that for next time and possibly cook a little longer.
