Quick & Easy Chicken Noodles

Ingredients

  • 2 packages McCormicks Pad Thai Flavour Shots
  • 2 zucchini, Roughly chopped
  • 2 carrots, Roughly chopped
  • 4 spring onions, Roughly chopped
  • 1 bunch Baby bok choy, Roughly chopped
  • 1 Head of broccoli, stems included, Roughly chopped
  • 3 stalks Kale or Spinach, Stems removed & discarded
  • 1 Red Capscium, Seeds removed & roughly chopped
  • 500 grams chicken mince
  • 1 package Vermicelli rice noodles
  • 1 tablespoon fish sauce
  • 1 tablespoon Ketchap Manis or Soy Sauce
  • 1 lime, Quartered, to serve
  • olive oil

Recipe's preparation

  1. Put hard veggies into bowl. Chop on speed 5 for 2 seconds

  2. Add softer veggies to bowl (with hard veg) and chop on speed 5 for 2-3 secs or until roughly chopped. Put aside.

  3. Put Kale/spinach into bowl and chop on speed 5 for 2-3 secs until chopped. Add to other veggies and put aside

  4. Heat oil in large saucepan/wok/frypan. Open flavour shots and stir to combine. Add flavour shots to pan and fry until fragrant - approx 1 minute. Add chicken to pan and stir until cooked

  5. Fill kettle with 1.5L water and set to boil. Then break up noodles and place into thermoserver. Set aside (Don't add water yet)

  6. Add veggies to pan and stir to combine. Reduce heat. Add sauces & stir to combine. 

  7. Pour boiled water onto noodles, separate with a fork and put lid on. Leave for 5 minutes.

  8. Occasionaly stire chicken & veg until cooked. Using tongs, place noodles into pan with chicken & veg. (You may need to drain the last few noodles in a strainer; using tongs leaves some water on the noodles, which helps make it 'saucey')

  9. Stir to combine. Serve in large bowls. Top with lime - to be squeezed onto noodles before eating.

  10. Enjoy!

Tip

I was given the flavour shots to try - I'm sure they could be substituted for a few Tablespoons of Pad Thai paste or other flavour/curry paste.

Veggies can be substituted for your favourites or whatever is in season. Or a packet of mixed frozen veggies could be used if you are in a hurry.

Substitute chicken mince for turkey, beef, pork etc, or omit for a vegetarian meal. 

Noodles can be substitued for rice - cook as per Tmx.

The cooking can be done in Tmx but will give a much finer result - I prefer it to be a little 'chunky'.
