Red Thai Curry

  • 2 carrots, sliced in thin discs
  • 150 grams broccoli florets, small
  • 2 chicken breasts, diced
  • 1 can coconut milk
  • 80 grams Red Thai curry paste, or more if you like it spicier
  • 100 grams Rice Vermicelli Noodles

Recipe's preparation

    Noodles
  1. Place noodles in a bowl and cover with cold water. Sit aside until curry is cooked

  2. Curry
  3. Add curry paste and 60g of the coconut milk to the bowl and cook for 2 mins/varoma/speed 1

  4. Add the remaining coconut milk and cook for 6 mins/100 deg/Counter-clockwise operation/Gentle stir setting

  5. Add the chicken breast and cook for 8 mins/100 deg/Counter-clockwise operation/speed 1

  6. Add the carrot and broccoli and cook for 15 mins/100 deg/Counter-clockwise operation/Gentle stir setting

  7. Drain the rice vermicelli noodles and place in a dish or thermoserver

  8. Pour cooked curry over the noodles and stir together. Serve when desired
