Red beans and rice with turkey meatballs

Ingredients

Turkey meatballs

  • 500 g turkey mince
  • 1/2 tsp Garlic powder
  • 1/2 tsp ground black pepper
  • 1/2 tsp dried sage
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/4 tsp ground cayenne pepper
  • 1 tsp salt

Red beans and rice

  • 200 g brown rice
  • 1 tbsp olive oil
  • 1 brown onion, cut into quarters
  • 2 garlic cloves
  • 1 carrot, cut into pieces (4 cm)
  • 1 celery stalk, cut into pieces (4 cm)
  • 1 tbsp tomato paste
  • 1/4 tsp ground cayenne pepper
  • 2 tsp fresh thyme, leaves only
  • 1 fresh bay leaves
  • 500 g water
  • 1 tsp Chicken stock paste (see Tips)
  • 400 g chopped canned tomatoes
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 3/4 red capsicum, deseeded and cut into pieces (1 cm)
  • 400 g red kideny beans, rinsed and drained (approx. 250 g after draining)
  • 2 spring onions/shallots, cut into slices, for garnishing

Recipe's preparation

    Turkey meatballs
  1. Place all meatball ingredients into mixing bowl and combine 5-10 sec/Counter-clockwise operation/speed 5.
  2. Using wet hands, roll 1 tablespoon of mixture into a ball and place into Varoma dish. Repeat with remaining mixture (makes approx. 16 meatballs) and set Varoma aside. Clean and dry mixing bowl.
  3. Red beans and rice
  4. Insert simmering basket into mixing bowl and weigh rice into it. Remove simmering basket with aid of spatula and rinse rice until water runs clear, then set aside to drain.
  5. Place oil, onion, garlic, carrot and celery into mixing bowl and chop 3 sec/speed 7.
  6. Scrape down sides of mixing bowl with spatula and sauté 1 min/Varoma/speed 1.
  7. Add reserved rice and remaining ingredients, except capsicum, kidney beans and spring onions/shallots. Stir to combine with aid of spatula and cook 20 min/100°C/Counter-clockwise operation/speed 2.
  8. Place Varoma into position, secure Varoma lid and steam 15-18 min/Varoma/Counter-clockwise operation/speed 2 or until turkey meatballs are cooked through. Remove Varoma and transfer meatballs into a thermal serving bowl or other large bowl and cover to keep warm.
  9. Add capsicum and kidney beans and heat 3 min/100°C/Counter-clockwise operation/speed 1, mixing with aid of spatula.
  10. Transfer into thermal serving bowl with meatballs and garnish with spring onions/shallots before serving.

You can replace the turkey in this recipe with chicken or pork mince.

    Great dish
    Even my 13yr old liked this dish (didn’t quite get the thumbs up from fussy Miss 11).
    I didn’t have any cayenne but will definitely add next time. I added the liquid as per recipe and although I thought it was a little soupy, it was also perfect this way with the meatballs and I wouldn’t reduce. Was like a Mexican Risotto. The meatballs were a little dense though. Next time I might just mix in a regular bowl to see if that makes it better.
    Was awesome with a huge dollop of sour cream. Tempted to do the recipe with chorizo instead of turkey meatballs.

    I love this forum to share recipes, tips and ideas - I have tweaked everyones suggestions tmrc_emoticons.-) I made this tonight with about 350ml of water and it was perfect. I'll cook for a few more minutes next time as the kids like their rice a bit softer. I also didn't have an onion or carrot so just used a zucchini and capsicum. It was really delicious thank you - its going to be made again! Popped a teaspoon of light sour cream on the top and it was beautiful.

    I used 250ml of water as some people have suggested however the rice was still a little hard when it was done, not sure if it would have made a difference if there was more liquid in it. Next time I wont use the cayenne pepper in the sauce as it was a little too spicy for the kids. The cayenne in the meatballs was perfect though. Was delicious though and will definitely make again!

    Great recipe. Very tasty and best of all its gluten and dairy free! Yum. Great family recipe. This will be a regular here. I only used 200ml water and thats plenty. Perfectly saucey and not too runny.

    Delicious healthy recipe I have cooked twice so far. My tips:
    - double the meatball quantities and cook in two layers in Varoma as there is so much sauce!
    - I halve the water in the stock (250ml), it is still really runny so I serve mine with a slotted spoon to get rid of excess liquid, unless you like it soupy!
    - Next time I am going to add the capsicum a step earlier as it tastes a bit strange raw in a soft hot sauce, for my liking.
