  • 500 gram chicken breast, 1
  • 1 onion
  • 1 stalk Celery
  • 1 carrot
  • 1 Red capsicum (small)
  • 1 Zucchini (small)
  • 1/4 litre chicken stock
  • 4 tablespoons Peanut Butter
  • 1 clove garlic
  • 1-2 dash oil
  • 1-2 pinches Salt & Pepper

Recipe's preparation

  1. Place garlic and onion into bowl, mince speed 7 3/5 seconds. Scrape down bowl. Add oil. Sauté varoma speed 1 for 2 minutes.
  2. Add celery, carrot, capsicum and zucchini. Chop speed 7-8 for 3-5 seconds depending on how finely chopped you wish the vegetables to be.
  3. Add chicken stock. Cook varoma speed 1 for 10 minutes.
  4. Insert butterfly. Add chicken and peanut butter. Cook varoma speed 1 for 10 minutes.
  5. Season to taste with salt and pepper. Cook a further 5 minutes varoma speed 1.
  6. Stand for 5 minutes before serving. Serve over rice or noodles.

    I add snow peas (roughly chopped) to this recipe in the last 5 minutes of cooking. They add a lovely crunchy texture to the dish and a pop of colour!
